The Flavor Is Spot On!

I really love the time of year when it’s not exactly summer anymore, but it still isn’t fall, either. The nights are getting a little bit chilly and the wind is changing somehow. It always makes me feel like I want to light up dozens of candles all around the house and curl up on the sofa, under my favorite blanket, with something that warms me up – whether it’s a cup of hot chocolate or something else. This recipe sure is “somethin’ else”!

Is there anything more comforting than a steaming hot bowl of creamy tomato soup? I don’t think so! It took some trial and error to learn to love tomato soup, and I think it was all because of using the wrong recipes. Some of them turned out too tangy and bitter, and I thought maybe I just didn’t like tomato soup, after all.

But I didn’t want to give up and I gave this creamy version a try. Super yummy! This is the perfect pick-me-up after a rough day, or a great first course of a special meal.

Another soup recipe, I know. But we are in the first days of winter and need to be prepared. In my home, we like to be stocked in recipes and lots of veggies and beans to make a good, hearty, warm and delicious soup. But these days, we love to change it up every now and then. In our home, changing it up means using tomatoes for soup. Weird? Maybe. But it really is so much fun to switch it up and give us a new treat.

 

You know what goes great with tomato soup? A grilled cheese. Last time I went to Panera Bread, I tried their creamy tomato soup with a Big Kid’s Grilled Cheese (that’s off the menu these days- but it’s basically a grilled cheese with slices of bacon inside). One of my favorite things to do as a kid was dip my grilled cheese in ketchup, but since discovering creamy tomato soup, it is so much better to dip it in a warm brothy, tasteful soup. The next time I make this recipe, I am going to buy a whole baguette of bread and fill it up with gouda and American cheese and put that in the oven til it is perfectly toasty. It is the best way to prepare a creamy tomato soup.

If you like the basic flavor of tomato soup but think that it could use a creamy and savory upgrade, this Creamy Sausage Tomato Tortellini Soup is exactly what you need. It makes in just half an hour and is really hearty and filling. I always did like tomato soup, though I usually did add some cream to it, and it was rarely enough on its own. I don’t think that you will go with the store-bought options once you try this, and you won’t need much with it for a really full meal.

 

I like these flavors for fall and winter, though you easily could savor this any time of year. It’s just such a perfect meal for those cold days when all you want to do is cuddle up by the fire. I would keep anything that you serve with it rather simple. Just a simple salad should be fine.
