This Soup Will Blow Your Mind!

For some time now I have been trying to find a recipe that would fit all three of my “rules”. Don’t even ask me where I came up with the rules… I guess it’s all this hassle over the holidays that made me want to simplify my cooking as well as my whole life.

Anyway, back to the rules! I wanted a recipe that would be easy to put together and as versatile as possible. You know I don’t want to run to the store every time I am missing one silly ingredient! The other thing was that I wanted the dish to be healthy and light, preferably a little spicy, too. I want to get rid of all the chocolate that somehow got stuck to my waistline during Christmas… And finally, I wanted a budget-friendly recipe – something made with inexpensive or even leftover ingredients.

Ladies and gentlemen, this spicy chicken soup ticked all the boxes! It is so versatile you don’t even need exact amounts for the ingredients. Just adjust according to how much of these things you happen to have in the pantry, or how many people are coming over for dinner!

Put Your Leftover Ham To Good Use And Make This Soup

We cooked a pretty big ham for Christmas. We were expecting friends and family members to come over for dinner and help us destroy it!

Well, they did come over and we had a great time but, apparently I had gotten a little carried away with all the side dishes and desserts, so there was a lot of ham still left in the fridge after a couple of days. Since I can’t bare to throw any food away, and it would have been way too salty for our furry family members, I decided to try a new recipe for it.

I made this beautiful, creamy leftover soup recipe and I immediately knew this was it. Potatoes and ham, and just a few other simple ingredients that we all have in our kitchen – it couldn’t be easier! You could, of course, add whatever vegetables you may have in the fridge, or spice this up the way you want it, but this recipe is very tasty as is. We had enough ham to make a double batch of this, and boy, am I glad we did! This turned out so delicious we could have served it for Christmas instead!

Ditch Your Old Recipe With The Extra Calories – This Creamy Mac Salad Is BETTER

There’s one thing I remember very clearly from my childhood. Whenever there was a party, no matter what the occasion, they always served macaroni salad.

I’m not sure if it was some kind of a trend back then but, I do remember it was always my favorite. Everyone had their own recipe, each a little different than the other, but to me they were equally delicious. It wasn’t until I was in my twenties when I first tried to make it myself. It turned out way too dry – I guess that’s what you get when you’re trying to pull something off without using a recipe!

I have learned my lesson since then, and these days I always find a recipe first before I start making all kinds of adjustments… This macaroni salad recipe right here is one of the easiest I’ve tried, and also one of the best. It’s definitely not dry, but it’s not too creamy either. Now that I’m trying to watch my waistline a little after Christmas, I made a healthier version of this. And I have to say I actually like it even more!

When we were kids, we had this “Guess what pie” mini contest during dinners. Whenever we have get-together with my aunts and their families, my aunts and my mother were the ones who always took care of food for the whole afternoon. Every dinner, after the main course, they would be serving mystery pie desserts. We had to guess what type of pie it was; and the first one who was able to guess correctly gets the first and biggest slice of his or her chosen pie. I sucked at this game so I always ended up having one of the thinner and last slices, but it was a good memory nevertheless.

 

We always find ourselves guessing whenever we go to parties that are not our families. These parties will have different food offerings and some will always be unfamiliar to us so we had to take a shot and try them. I have been a victim of super spicy food, sweet and sour (which I don’t like), and something else that was disguised as meat, but wasn’t really meat. When I came across this recipe, I was intrigued by the mystery of it. While I am not surprised by what it really is; I am surprised by the way it tastes. Especially when I heard it’s a very low fat dish!

There’s this restaurant at the mall near our village that serves the best gumbo, but I have never considered eating at it. I love stew, but I have always thought that Gumbo is a type of really hot dish that has super strong flavors. I am not a fan of strong flavored dishes—they give me a headache. And I have very low spice tolerance. The spiciest thing you can have me eat is the hot and spicy chicken from a fast food restaurant.

 

Until my best friend experimented with a gumbo dish at my kitchen. She just invaded my kitchen one day, brought out her tablet and opened it to a webpage, and started using my ingredients. She even had the audacity to reprimand me for not having sausage during that time. Who told her to cook in my kitchen anyway? Ugh. Best friend privileges. But I have to confess that I’m glad that she did because I wouldn’t have realized that I was missing a really good culinary experience by not trying gumbo.

I’m a huge fan of easy-to-make soups that can be stored for days and will make my life so much easier. I’m even more excited if I can make a soup that is said to burn fat while I’m eating it! Whatever the actual scientific studies say about this cabbage soup, it is definitely healthy for you. But most importantly, it’s so delicious that you don’t even think of it as health food. Lately, I’ve noticed most of my favorite soup recipes have a creamy base.

After all the heavy meals I’ve had during Christmas, I just wanted to go with something lighter. This awesome soup has a tomato base, which is way less fat than any of the creamy chicken soups I’ve made. What I love most is how versatile this recipe is! You can easily adjust it to make it just the way you like it.

I this soup to be quite filling, which is a good thing because then I’m not hungry again an hour later and rummaging through the refrigerator. You’ll really enjoy this yummy recipe 🙂

If you have been reading for some time, you should know that I absolutely love a good potato. Yeah, I know it sounds funny and you thought I was going to say “a good bowl of soup” but it is just true. I love going to restaurants like Longhorn, or Texas Roadhouse, or even Wendy’s when I am on the go to get myself a good ol’ fashioned potato. It is just awesome! There is something about it for me that is so comforting and soothing to sit with a perfectly delicious baked potato.

 

Now, do not skip out on the fixings with me either. I hate going to Wendy’s to find that they are out of cheese or simply did not prepare it with everything. No girl, load that baby up! One day, after a particularly unamusing visit to Wendy’s, I decided to make my own at home. Now, I do not know exactly how many people I thought I was feeding, but let’s just say I had leftovers. Guess what I did with it? Read on this recipe and you will find out! It is a simple and easy way to use leftovers, but it does not have to be just that. You can make this with regular uncooked potatoes as well.
