Put Your Leftover Ham To Good Use And Make This Soup

We cooked a pretty big ham for Christmas. We were expecting friends and family members to come over for dinner and help us destroy it!

Well, they did come over and we had a great time but, apparently I had gotten a little carried away with all the side dishes and desserts, so there was a lot of ham still left in the fridge after a couple of days. Since I can’t bare to throw any food away, and it would have been way too salty for our furry family members, I decided to try a new recipe for it.

I made this beautiful, creamy leftover soup recipe and I immediately knew this was it. Potatoes and ham, and just a few other simple ingredients that we all have in our kitchen – it couldn’t be easier! You could, of course, add whatever vegetables you may have in the fridge, or spice this up the way you want it, but this recipe is very tasty as is. We had enough ham to make a double batch of this, and boy, am I glad we did! This turned out so delicious we could have served it for Christmas instead!

Hi everyone! Today I’ve been in such a hurry it made me think of quick and easy dessert recipes! I do love a good, old-fashioned cake that took hours to make, frost and decorate – I would just rather not make one myself right now. Listen, folks – I’ve had way too much chocolate cake lately. I mean, so much that I almost can’t stand the look of it, which scares the heck out of me!

I love chocolate cake, so there has to be something wrong with me! I guess the holiday season came with such an overdose of chocolate that I need to find different kinds of desserts before I can return to my dear old favorite again.

Here’s one that’s actually on the healthy side, even though it tastes so sinfully delicious! I love apples and I’ve always enjoyed apple pies and crumbles, but it had been years since the last time I had baked apples. The recipe I used back then wasn’t all that tasty – the apples seemed a little dry, as if all the flavor had evaporated during baking. So this time I made sure I would use a recipe that would turn out juicy and delicious.

I am a mega slow cooker user and casserole maker. Sometimes, I think I use these methods of cooking a bit too much as my family tends to get a bit bored with them. Even though this recipe calls for the Crock Pot it is much different than my normal dinners. You see, it’s for a tender and robustly coated chicken breast that is served with a fluffy bed of rice. This dish is smothered in lemon seasoning and capers. Yum! It tastes so fresh and healthy. My husband and children really liked it, which was shocking to me because there is always someone who is wrinkling up their nose at what I make.

Some people like to use white rice in this recipe but I actually prefer using wild. It’s healthier and a bit more textured. Now, if you like a fluffier rice, by all means, use white or even brown. This recipe is very easy to make and all you do is set it and forget it. Anyone can do that, right? Right! I know you and your family will enjoy this meal as much as mine did 🙂

I was immediately drawn to this recipe because it is called “Soldiers’ Fudge.” You see, my husband is a veteran and I used to send him care packages overseas all of the time. he and his brothers enjoyed getting these packages and would always ask for more homemade goodies. I often had to make things that were stable enough for travel and typically this travel lasted for close to 2 weeks or a month. So, things like heavy cookies, fudge, and hard candy often found their way into my box. I hope you all enjoy this delicious recipe for World War Two.

Why is it called “Soldier’s” Fudge? This is another thing about this recipe I like. Those of you who like to mail out care packages, take note: According to www.recipestogo.com, “This recipe was very popular during the Second World War when people wanted to ship goodies to their soldiers overseas. It travels well, lasts a long time and contains no sugar as sugar was rationed during the war.”

I was raised in Michigan, and as a young girl, my family and I would frequent a Town called Frankenmuth. Now, Frankenmuth is a small tourist village that is completely decked out in a Bavarian theme. I’m talking their local McDonalds is built to look like a structure you’d see in Bavaria. This town is seriously a wondrous place to visit, especially during the holidays. We would often go during the Christmas season and during my birthday, which is also during the holidays 🙂

There is a restaurant there called the “Bavarian Inn” and as you may have already guessed, serves solely German cuisine. You can get things like noodles and kielbasa, which is one of my personal favorite meals. So, you can imagine my excitement when I came across this recipe for Bavarian noodles and kielbasa. It’s super easy to make and your husband and kids will thank you for rewarding them with such a great treat.

This cake is so easy to make and it’s not to unhealthy for you either!

Wow! I can’t believe the holidays are almost over. As I type this we have less than 48 hours of 2016. Where has the time gone? I think the time has disappeared into the vortex of unhealthy holiday eating haha! I put on the big Christmas dinner this year and I made probably 50,000 calories worth of food or more. From casseroles to desserts we had it all. Then, my family and I eat off the leftovers for the next week. I think I probably gained 5 pounds. I don’t know for certain because I’m too afraid to step on that thing in my bathroom I call “the scale.”

So, as we sit here on the cusp of 2017, I am brainstorming for healthy recipes to make for my family so that we can get back on the wholesome eating train. And guess what? This even includes desserts like this 2-ingredient cinnamon apple cake!

You guys and gals are really going to love this recipe. It’s satisfying, delicious, and very easy to make. Plus, it won’t expand your waistline if eaten in moderation. Enjoy!
