I love a good loaf of bread for breakfast. Growing up, we always lived with my grandma who prepared us a traditional Cuban breakfast almost everyday: Cuban bread toasted or pressed lathered in butter with a “café con leche” which translates to Coffee and Milk. Our “café con leche” is a steaming cup of milk with a shot or two of espresso and then sweetened with sugar. It is definitely not the most nutritious breakfast, but it certainly is delicious!
Now that I live on my own, I am always looking to have something that reminds me of my past. I am addicted to Cuban bread and café con leche, but I know I need to have something a little more filling and that will give me energy for the day. That is why I am always on the lookout for new recipes that are a mix of bread with good breakfast foods such as eggs and bacon. You will not believe how ecstatic I was when I discovered this recipe! This is a loaf of bread that has scrambled eggs and bacon in it. You can do so much with this to switch it up and make it your own.
