If You’ve Tried 5/6 Of These Recipes, Your Family Members Are Very Lucky

It is still very much winter here up North and occasionally I wonder if spring has forgotten all about us this year! I don’t mind the snow, as long as the days are nice and sunny, but sometimes the coldness really gets me. That’s when I like to cook these hearty dinner recipes, to keep myself and my family warm.

Some of these recipes have been around for decades and I can actually remember my grandmother serving them, when I was young. Some are a little bit more modern, although I’m not sure if I can call any of these “trendy”. In my opinion, that’s a good thing! I’ll take any old-fashioned recipe over a brand new one, anytime!

It’s impossible for me to name a single favorite of these; every one of these recipes has been a great success at our house, and I am making these pretty often. I like the fact that these are honest, hearty, inexpensive meals that you can make even on a tight budget.

Recently, my neighbor Anne went on a long trip to England.

She enjoyed traveling through all the different parts of the country and continually sent me photos of all her new adventures.  As she traveled through the area, she would always send me photos of the food she was eating.  The one thing I noticed is that it was always the exact same meal.  It looked like some way or another, it was always a big, hearty bowl of beef stew with a biscuit on the side.

I did not say anything of my observation at the time, but when she returned, I did.  I asked her why she always ate the same thing and she told me it is because after trying it on the first day, she fell in love and did not want to eat anything else.  She made it her mission to find the best beef stew in all the areas she was in and ate only that for days at lunchtime.  She says it was fun and exciting and was still not bored of it after she left the country!  Upon returning, she got on the ball and began looking for recipes to make it at home.  She found this one and has made it at least once a week ever since her return.

The Most Comforting Weekend Meal Ever

Right now the weather is getting pretty cold here up North! This is the perfect time for a nice, hearty stew, that will chase all that chilliness away and give you a warm feeling inside. I used to cook stew on the stove top, until recently, when I came across this recipe. This makes it even easier for me, as I can just leave it and return to it when dinner time is getting closer!

Use your favorite stew meat for this dish! I also love to add more vegetables; sometimes I add onions, turnips or even yellow beet. That’s one of the great things about this recipe – you can add pretty much anything you want, and it’ll be delicious after a full day in your slow cooker. I always use potato starch as a thickener, but tapioca flour can be used instead, if that’s what you prefer. Don’t forget to discard the bay leaf before serving!

This Hearty Meal Will Warm You Up On A Cold Night

I grew up on a small farm. My Dad would take care of the land and my Mom was taking care of us, as a stay-at-home mommy.

I didn’t always appreciate it – I thought my friends were so cool, having their own key to their house since their parents had office jobs and they weren’t home yet, when we got back from school. My friends could go through the fridge and eat whatever they found, on the couch watching TV. I “had to” go home and eat whatever Mom had cooked, and our whole family always ate together in the dining room.

Boy, do I feel different about my childhood now! It was such a blessing to be able to enjoy a homemade dinner every single day, and what made it even more special was that we really spent that moment together. It’s one of my most cherished memories, ever since my Dad passed away – and this beef stew recipe reminded me of all that. It was my Dad’s favorite!

Is there ever a good time NOT to eat beef stew? Not really. I mean, if it’s 100 degrees outside….nah, I’d still eat the beef stew. But for real, beef stew is absolutely outstanding on a cold day. It’s the type of meal that warms you up from the inside out and you just can’t get enough of it. Plus, beef stew is super easy to make. I usually make beef stew after we have had a roast for dinner. I’ll just shred the leftover beef and voila!

My kids and husband love beef stew, which is a plus because a few of my little cherubs are very picky eaters. I enjoy serving this stew to them with freshly made biscuits. Freshly made meaning out of a Pillsbury Grands can haha! If you’re feeling saucy, g’head and make your biscuits from scratch 🙂

One of the Best Ways to Cook These Tender Cuts of Meat is Slowly

And in a hearty stew, of course!  There’s nothing better than tender beef dripping in a thick broth, surrounded by slow roasted and earthy vegetables.

This recipe makes 6-8 servings, but if you have a big pot, you can easily double it.  Set-it and forget-it, and let it cook all day while you can have your hands available for the holidays.  You can also add any additional vegetables really, that you want, as long as you add a little extra beef stock.
