If You’ve Tried 5/6 Of These Recipes, Your Family Members Are Very Lucky

It is still very much winter here up North and occasionally I wonder if spring has forgotten all about us this year! I don’t mind the snow, as long as the days are nice and sunny, but sometimes the coldness really gets me. That’s when I like to cook these hearty dinner recipes, to keep myself and my family warm.

Some of these recipes have been around for decades and I can actually remember my grandmother serving them, when I was young. Some are a little bit more modern, although I’m not sure if I can call any of these “trendy”. In my opinion, that’s a good thing! I’ll take any old-fashioned recipe over a brand new one, anytime!

It’s impossible for me to name a single favorite of these; every one of these recipes has been a great success at our house, and I am making these pretty often. I like the fact that these are honest, hearty, inexpensive meals that you can make even on a tight budget.

What’s your favorite hearty dinner recipe? I’d love to hear about it, so don’t forget to leave a comment below!

This Easy Soup Recipe Is My Children’s Favorite

I love a good, hearty soup that I can serve to my whole family without objections. We have a couple of very picky eaters in our family, and for some reason they both think soups are worse than taking bitter medicine. I’ve tried almost anything; sometimes they give in and eat one serving of cheeseburger soup – probably because of its name! So I thought I’m just going to have to focus on things that they do love, and find out if there’s a way to turn those flavors into soup. I thought it would be a tricky task but it has turned out pretty awesome so far!

Typically I would go for the creamiest soup possible, to make sure my kids would like the flavor. But this time I decided to trust that they would be intrigued by the name alone – you see, this is lasagna soup!

It was a little hard to convince them this really tastes like lasagna, since it obviously doesn’t look like it at all… But the aromas lingering in the kitchen were so familiar that they couldn’t resist giving it a try. And they absolutely loved it!

Although this is not a new concept, it’s one that is not only quick and easy on a weeknight, but it also saves a lot longer than if you made lasagna in a casserole dish.  You can even freeze this soup, if need be so.

basil, Italian Sausage, kale, lasagna, Lasagna Soup, Sausage Lasagna, sausage tomato soup

Instead of baking it in a casserole, and probably making a massive mess in the kitchen, this soup has many of the main components you would find in any lasagna dish.

This soup serves about 8 people, and only takes about 30 minutes to cook.  Dollop with some fresh ricotta or sprinkle some shredded mozzarella over the top.
