Attention, Please! This Baked Pasta Is What You Need In Your Life!

Some of my favorite meals are Italian.  I will eat just about anything that is pasta layered in gooey melted cheese.

Add in just about any type of sauce (I’ll pass on the spicy ones, though) and I’m in total heaven.  This dish right here is the perfect Italian flavors combined into one and makes for a completely impressive dinner. My husband and kids absolutely loved this recipe. In fact, they just couldn’t get enough of it. This baked rigatoni is a real keeper!

This meal here is completely amazing.  You take rigatoni pasta (already boiled to al dente) and then stacked on their ends in a round pan. After that, you take a delicious meat sauce and layer it so it falls through the little rigatoni and covers the top end.  Then, you layer that in cheese and bake it til it’s ooey and gooey over the top.  Simply the best.

If you’d like to get a feel of an authentic Italian meal, then this recipe is made for you. It is just as perfect for busy weeknights as it is for special occasions – this is actually my husband’s choice every time I ask him what he would like me to make for date night!

It’s Impossible Not To Love These Cookies!

If you love cookies and pecan pie, you will adore this cookie – it’s basically both rolled into one! The cookie part is tender, buttery and a perfect vessel for the gooey pecan filling.

These will be great to serve during the holiday if pie making isn’t your thing. There’s a little prep time for chilling, but overall this is an easy recipe. Plus, once you take your first bite out of one of these darling little cookies you’ll be glad you took the time to make them.

I am a huge fan of pecan pie but my youngest son has a tree nut allergy. So, we usually don’t have pies and other desserts containing tree nuts in our house. Now, that he is older he knows he can’t have these things because they will hurt him so it is a wee bit easier to make a dessert such as a pecan cookie and keep them away from him. My son would never touch them anyway 🙂 I hope you enjoy these pecan pie cookies as much as I do!

These Are So Easy To Put Together!

My friend and I made these rolls last week for our church potluck. Neither of us had ever tried Hawaiian sweet rolls before, and the ingredient list made our eyes roll (pun intended!)

We thought it seemed a little crazy to add something we had been used to adding to desserts and cakes – however, my aunt had specifically told me this was the best recipe she had ever tried in her whole life. Since my aunt is the crazy bake lady and she makes the most delicious things from scratch, my friend and I simply had to trust her.

We added all the ingredients and carefully followed the instructions (which were super easy, by the way). The rolls came out so yummy! These Hawaiian sweet rolls are the perfect addition to any holiday table. Your friends and family are going to assume that you bought these rolls from the store because they are so ding dang good! I would highly recommend making a double batch – I guarantee they will be gone before you know it!

My Mom-in-law requested a Key Lime Pie for her birthday dessert.

I have a normal recipe that is very rich. However she and I have been changing our eating habits, and I really wanted something that had flavor, but not a lot of fat. This turned out perfect. This is now my go-to Key Lime recipe. I hope you enjoy as much as we did as this recipe will not disappoint. It reminds me of my favorite KLP from Lulu’s in Gulf Shores. As a matter of fact, I’ll be visiting Lulu’s next month when my youngest son and I go to Florida for a mini-vacation.

Are You Ready For The BEST Apple Pie Ever Known To Man?

If there is one thing I love about pie it is the crust. I am a huge fan of buttery, flaky pie crust. I honestly think I could just eat the crust and not the pie filling. LOL!

However, today’s recipe for homemade apple pie definitely leaves me wanting to eat the filling. You guys, this recipe is just like your grandmothers. It is entirely made from scratch and produces one of the best pie crusts I’ve ever eaten. It takes a minute to throw it all together but let me tell ya, once it’s made, you’ll be glad you put in the effort.

The crust in this apple recipe is flaky and delicious, and I think it might be because of the addition of buttermilk. I especially like how three types of apples are used. It just added to the overall yumminess. All that’s missing is a scoop of vanilla ice cream! If you have some on hand, please try this pie with the ice cream. It is going to make you slap your knees! I think I’ll being serving this yummy pie over the holidays.

My husband is a lover of corn.

I think I have previously mentioned his almost practically adoration for it.  He just smells corn and knows he is going to love the meal.  Want to hear a funny story?  Well, we recently discovered a new French café near our home.  It is so delicious with perfectly crispy Croque Monsieur sandwiches and light and fluffy croissants. They are to die for.  The coffees are just perfect and the location looks exactly as it does in France. Well anyways, recently my husband tried their creamed corn crepe.  I thought it was a little weird, but he loved it.  Now every time we go to this French café, he orders this.  Well, yesterday we stopped in once again and the gentleman at the counter told him they did not serve it anymore.  When my husband disappointedly asked why, the waiter said only he orders it.  I started cracking up.  His obsession with corn has been taken a little too far.  We are going to have to find a new place that serves creamed corn crepes it seems.

When we first got married, I asked my husband what he wanted me to cook on the daily.

I truly love to cook and wanted to make anything and everything he wanted.  my husband told me multiple times that he wanted me to make not only the foods we grew up on but new and adventurous foods.  To us, that meant anything other than the fried plantains and black beans from our Cuban heritage.  We would be willing to try anything, especially if it wasn’t Cuban food.

As we got accustomed to married life, we tried new dish after new dish every single night.  Needless to say, we did gain a few pounds, but boy was it worth it.  One of the first meals we decided to make was chicken pot pie.  I knew it was a dish my parents ate often when we lived in Ohio and I wanted to make it here where it is uncommon to make.  We absolutely loved this dish.  I have made it in Pyrex dishes, in the crock pot and just regular meatloaf pans, but this, it is the absolute best version of the pot pie I have ever made.  It is so simple and easy and so full of flavor and fun because it’s not just the pie, but a soup!
