This Was My Father’s Favorite Dish – Yum!

My mother never had a crock pot but that doesn’t mean she didn’t know how to slow cook food to perfection. My Dad was crazy about her sausage stew; Mom would make a huge batch of it, letting it simmer slowly for half a day. By the time we gathered around the dinner table the whole house smelled amazing and our tummies were growling. She didn’t have to call for us twice, that’s for sure!

Now, I really don’t have the time to stand by the stove all day (neither did my mother so I have no idea how she made it happen). That’s why I love my slow cooker – I can let it do all the work for me and then I just happily enjoy the results!

This hearty sausage stew is one of my favorite crock pot recipes. Probably because the flavor is almost identical to the one my mother used to make. Making dinner doesn’t get any easier than this! I make this stew year ’round but I think it’s perfect for the chilly fall and winter nights.

This chowder will cure all the worries in the world.

We have a friend who has made it his life’s mission to never miss a barbecue day during the summer. That means he wants to make every single summer dinner outside, on the grill, rain or shine.

There’s nothing wrong with that and I really admire his dedication, but I have to say I probably wouldn’t be able to do the same. I just can’t make myself stand by the grill if it rains, and that’s why I always have a “Plan B” for dinner, just in case.

We’ve had surprisingly many rainy days this summer, where I live, so I’ve been going through my rainy day recipe box a lot lately. It’s filled with soups, stews, crock pot meals and other things that make you will warm and cozy, when it’s thundering outside.

I wonder if anyone else has collected recipes for this purpose, or if I’m the only one? Anyway, this is the recipe I chose from that box earlier this week. It turned out amazing!

I’ve got news for you; these are not meant just for breakfast anymore! Sweet potatoes are a great healthy substitute for regular potatoes any day – and some of us, myself included, even prefer them. The flavor is wonderful and brings in that lovely sweetness that compliments most savory dishes so well. My husband had his doubts about this recipe when I explained what I was going to make, but he sure changed his mind after taking his first bite!

 

Make sure the oil is nice and hot before you drop these in, or they can fall apart. This recipe yields 4-6 patties and takes only 15 minutes from start to finish, but the product sure is refined and delicious! You can make small adjustments to the recipe, to adjust it to your taste. In fact, my husband suggested I’d try these with some red pepper flakes next time. I think I’ll do that!

There’s little better than a nice bowl of chili to warm you up on a cold day. This recipe is a bit non-traditional, but it is satisfying and rather quick and easy to put together. I could eat chili most any time of year, though many people like to save it for the colder months. As often as I cook chili, though, I am on the lookout for creative variations on the traditional recipe, and this is a nice one.

I’m pleased to report that this chili is a vegan wonder, but you can easily beef things up with any type of meat you have handy. I’ve made it at least four times over the past few weeks with different fillings, and it never disappoints. Try simmering it with top round steak, ground turkey, shredded chicken, lightly browned chorizo or some spicy chicken sausage. (The Dude really lost his cool over the chicken sausage version.) Feel free to get creative.

I make stuffed turkey a few times year round. Why wait until the holidays to eat something so delicious? The one issue I have with it is how I can manage to cook a nice side dish without too much of a hassle. My days are busy, and when the turkey is in the oven I need a side dish that I can whip up easily. Why slave away over hot pots, when you can roast this sweet potato side dish in a slow-cooker? If you’re not a fan of the usual marshmallow topping, or perhaps you want a fresh, healthier alternative, than this recipe is right up your alley!

 

When your oven is stuffed with turkey, this slow-cooker side can save the day!  You can even prep this the night before, and simply turn it on 20 minutes before the turkey is done.  This recipe calls for sweet potato, but you can substitute yams, and any type of nut, you choose.  This is a no-frills, delicious country side-dish, that goes perfect with any holiday feast!
