Giant green peppers stuffed with tender rice, savory beef, and juicy tomatoes. Yum!

As a kid, my mother would quite often make stuffed green bell peppers. We had a garden in our backyard so during the summer months mom would have us children go outside and harvest our own peppers to be stuffed. We always thought this was so much fun! When it came time to eat we would fight over whose pepper belonged to who. I have no idea how we could even tell haha!

My mother was always making delicious foods like stuffed bell peppers. Cooking seemed to be second nature to her. I hope I am half the cook that my mom was and is.

What Are You Having For Dinner Tonight?

When I am looking for recipes that give me a nostalgic feeling I often turn to stuffed green peppers.

As a kid, both my mother and grandmother would make these little gems of goodness. You would think that stuffed peppers would take a long time to make but they honestly don’t. They certainly taste like you’ve been slaving away in the kitchen. I adore the recipe that I came across on the next page as it is very easy to follow and the ingredients are quite simple. You’ll be serving up some stuffed pepper smiles in no time flat! So, what are you waiting for?

I like to make a dessert to go along with these stuffed peppers and apple pie sounds like it would hit the spot.

What sweet treat will serve after dinner tonight?

Quick Tip: Side salads with Italian dressing go great with these peppers…just sayin’ 🙂

Bell Peppers, Peppers, Shredded Cheese, stuffed bell peppers, Stuffed Peppers

Slow boiled until soft and then stuffed with a meaty rice, these peppers are perfect for a hearty dinner, or even a quick lunch.  You can make these with chicken OR ground beef.

Stuffed peppers are amazing because you can freeze them, and when reheated, they taste as if you just made them!  They also make for a convenient lunch for work.  This recipe yields 4-6 servings, depending on the size of the pepper.

Though they’re traditionally cooked in the oven, it turns out that they turn out very well in your slow-cooker, too.  These Slow-Cooker Stuffed Bell Peppers are super-easy to make, and each one is a nice, self-contained meal, with plenty of healthy protein, vitamins, and juicy, savory flavor!

When my paternal grandmother, whom all the grandchildren knew affectionately as “Lolly,” wanted her home to have the captivating aroma of a nice, home-cooked meal, she would chop up some sweet onion and bell pepper and sauteed it in some butter or olive oil for a few minutes.  Something about that smell always drew me in, and I have to say, I always liked the taste of stuffed bell peppers, too.  Much as I liked the Stouffer’s ones from the grocery store, they just didn’t compare to homemade ones.  It turns out, with my Crock-Pot, I could make them at home much more easily–and enjoy that seductive bell pepper aroma all day.  Needless to say, I was very pleased.
