My grandmother used to make the best oatmeal.  I’ve tried to re-create it many times, but have never really perfected her recipe.  She must have used a lot of love, because nothing I’ve tried has come close to the comfort her oatmeal provided.  Since I had a lot of oatmeal, I sought out ways to use our oatmeal in a different way.

I’m so glad I found this recipe!  It’s such a different twist on the traditional oatmeal comfort food than you might be used to.  It’s hearty and filling, yet delicate and sweet.  It’s an amazing way to start your day!

Quick Tip – Serve this recipe cold or hot.  I like pouring a little milk over the top before eating.

Mind blowing Quinoa breakfast bars!

Gold baking soda, Gold whole wheat flour, McCormick cinnamon, McCormick vanilla, Quaker Oats

Who doesn’t love breakfast? We are all guilty of skipping the most important meal of the day at least once in our lives. We have to get ready for work, drop the kids at school, run some errands blah, blah, blah. No matter how busy we all can be, it doesn’t mean that we can’t make time for it right? It is essential to have breakfast.  Period.

“These bars come together quickly, especially if you have leftover quinoa in the fridge like I usually do. However, you can easily make a fresh batch of quinoa for use in these bars. Just let it cool slightly before mixing up the batter. I cut these into bars and put each one in a snack size Ziploc bag before putting them in the fridge. That way they were ready to go and hubby could just grab a bag on the way out the door to work. I’d recommend letting them cool completely before cutting.” according to Lindsay of The Lean Green Bean

Cornbread waffles, Cornmeal, egg, Gold Medal, Gold Medal flour, Homrel Chili, hormel, jalapeno, Kraft, Kraft Cheddar, McCormick, paprika, Quaker Oats, southwest waffles

Cornbread comes to Taco Tuesday, in this truly inspired dish!

I always like to experiment with new flavors, and this knocked the socks off my family, let me tell you!

These are even more amazing with a dollop of guacamole and sour cream, if that’s your thing.

After all, ya gotta do-it-up!  You only live once!

If spicy is too much for you, then you can lay off the jalapenos and chilies.

I can hardly wait to make this again, and experiment with the flavors.

You can truly mess around with this one, and in my opinion, these waffles are good anytime of the day!

This recipe takes about 30 minutes to make and serves up to 4 people, and it’s as easy as pie!

The wonderful thing about this recipe is that you don’t have to add a Spanish flare.  It can be virtually anything.

The cornbread waffles are great even by themselves!

Our friends at 12Tomatoes had this to say about this recipe:

“There aren’t many things we like more than fresh, warm cornbread. And believe it or not, cooking up that golden, delicious dough is faster and easier in a waffle iron! These savory treasures are a fun twist on classically sweet waffles, and we had a ton of fun using our waffle iron for something other than breakfast. We added jalapeños to ours for a little extra kick, but you can easily omit them to make this dish more kid-friendly. Top them with chili, cheese, and sour cream, and you’ve got a fun and festive meal filled with Southwest flavors!”
