Hey, everyone! I hope you are all enjoying your day. It is a warm and breezy day here in western Pennsylvania, which is a nice change compared to how it has been.

I’m so sick of the cold weather and snow. However, I do try to be thankful no matter what the day brings because this is the day that the Lord hath made, after all! Do you know what I am thanking the Lord for today? Upside down hummingbird poke cake in bundt form. Now, doesn’t that have a nice ring to it? Just saying this desserts name tickles my eardrums.

When it comes to bundt cakes I’m all in. I love the bundts! Bundt cakes are super easy to make, they look gorgeous, and they taste lovely. This hummingbird poke bundt is extra special because the glaze literally drips down into the inside of the cake. It’s absolutely divine.

One of the things that I enjoy most about this cake is how I can toss things in the center of the cake. I like to add chunked pineapple. It looks pretty and tastes super sweet. Enjoy!

I had never even heard of the term poke cake until one day that I was just relaxing with a friend of mine on a couch and she told me about the new poke cake she discovered. You see, she is a great baker and loves to try her hand at new recipes that are usually plain and make them a little more exciting. One of her favorite new styles of cakes is poke cakes and I had no idea what they were.

I asked her what in the world that was, and with a laugh she explained that it is simply a cake baked in a brownie dish and then poked to infuse with some sort of delicious liquid or frosting. It is almost the same process of making a Tres Leches (a vanilla cake that is poked to infuse cow’s milk, evaporated milk and sweetened condensed milk), but even easier. This specific one she was referring to was chocolate and I was amazed at all the amazing tastes that could come together from one simple poke cake. This was almost like two cakes in one here and I was thrilled to give it a try! I was elated and could not wait to get my hands on that recipe!

If you like a good blend of peanut butter and chocolate, this Reese’s Peanut Butter Poke Cake is a good recipe to try. It’s easy and quick to bake. Fudge and cream cheese both make for some good desserts on their own. Turns out, when combined, they make for over-the-top dessert deliciousness.

I don’t think I’ve ever been in such a hurry to finish making a dessert! I simply just couldn’t wait to have a bite of this amazing cake. And I have to say, it was everything I had dreamed of, and more! If you’re planning on serving this at a family gathering, make sure you grab a piece for yourself first before it’s too late!
