I love heavy, creamy, buttery casseroles – I really do, but the older I get, the more I realize how all the extra calories are affecting my body… This Lighter Tuna Casserole is a nice twist on an American classic and makes for a great family meal.  Serve baked, with just an hour of combined cook and prep time, or just serve tossed in about 40 minutes.

 

A casserole is a great go-to if you want something for a simple and fairly quick family meal that yields plenty of leftovers.  Mother often made a batch of tuna casserole for those hectic midweek school nights.  I enjoyed it then and still make it for myself often.  When I came across this lightened recipe, I was eager to try it to see how it compared to the original, and I was very satisfied with the results.

I admit, I am a sucker for little pieces of fried chicken breast. I especially love these chicken breast pieces when they come coated in an orange glaze. You might think that you have to visit your nearest Chinese restaurant to get this saucy treat, but you don’t. Instead, make them in your own kitchen!

 

Not many restaurants use breast meat, it’s mostly thigh, which is ok, but not as good as breast in my opinion. So when I tried this recipe I was skeptical of how the sweet chili sauce was going to play with the Franks red hot and mayo (which is a sauce combination I use often for dipping). To my surprise, they played very well with each other. As far as the chicken itself, these little fried pillows of tastiness really are crispy on the outside and tender and juicy on the inside. This dish will make you the star of your next Asian inspired dinner party.
