This Really Melts In Your Mouth

I still remember it like it was yesterday. The first time my mother-in-law came over for dinner! I was terrified and excited at the same time. Excited, because she is such a wonderful person and I couldn’t wait to see what she thought of our new home. Terrified, because she is also an excellent cook, and I didn’t want to look bad serving her a mediocre, homemade meal. Nope, it had to be something special. I turned to my husband and asked what her mother’s favorite dish was.

Of course, right then and there I realized it had been a mistake. Her favorite dish turned out to be pot roast, and I had never managed to cook it the way it’s supposed to be done. It had always turned out kind of dry, or just plain and tasteless for me.

Fortunately, I had two whole weeks to practice before her visit. I must have made pot roast 3 times during that time! But it was well worth it, since I finally ended up with this amazing recipe. The dinner was a huge success and my mother-in-law really liked this pot roast. I’m sure you will, too!

My husband loves enchiladas and we had a special day coming up, so I wanted to make sure this meal was going to blow his mind. I posted a simple question on social media (isn’t that what you do these days, whenever you’re trying to find a solution to a problem?)

I asked, “what is your favorite enchilada recipe, and why” – and I must have gotten a dozen replies right off the bat! People were sending me their favorite recipes and very thorough explanations of why they thought theirs was the best in the whole universe.

Of course this meant I had a big problem. How was I going to determine which one of these was the tastiest recipe? I didn’t have the time to test all of them! So all I could do was rely on my friends’ argumentation. And this one made sense; one of my friends had replaced ground beef with flank steak. He said it made a huge difference, even though the rest of the ingredients were pretty much the same he had always used.

Skip The Trip To KFC And Make These In Your Home Kitchen

My husband loves fried chicken. I’m telling you, if there was a KFC in our town, I would have to drag him out of there kicking and screaming every day. Don’t get me wrong – I do love fried chicken, too, but he’d rather eat it every single day and it’s not exactly very healthy if that’s ALL you ever have for supper… So I’ve been trying to come up with a perfect recipe that would taste just as delicious, but would be a little bit healthier and less greasy.

I had tried different ways to make chicken wings but none of them really seemed to wow him. He never complains about any of my cookings (his mother raised him right) but you know how it is. When you’ve lived with someone for twenty years, he only needs to raise an eyebrow and you know what he’s thinking!

I had almost given up hope already, but then I decided to get back to basics and only use the ingredients I knew he really loved. I made a sort of a marinade for chicken wings and then baked them in the oven. You should have seen my husband’s face when he tried them! His eyes just lit up!

I love a good Italian meal. Oh gosh, how I love when my husband tells me that he is in the mood for Italian! With him, it does not come often. He is just not a pasta kind of guy. He likes other things and although he will eat Italian, it is definitely not his favorite. That is why when he tells me he is in for some good Italian cuisine, I jump at the opportunity. A lot of times, we go to my favorite restaurant, Mike’s (ironically, that is my husband’s name too!) and I get a classic ravioli or maybe a lasagna.

 

This last time we visited my favorite restaurant (in the world!!), as the waitress was passing out the garlic rolls, she told me that they had a new special. She knows I love lasagna so she thought I would like this: lasagna roll-ups. Yep, they are kind of like fruit roll ups, but they are even more delicious. They take the layer of lasagna noodles, and add the ricotta cheese mixture as well as tomato sauce and meat and then roll them up and bake them in a casserole dish. It is a neat way to serve something so delicious!

This Is The Perfect Meal For Busy Weeknights!

Want to know what time I got up the day before? 4:20am. I’m not joking!

My schedule has been crazy full for the past couple of weeks so I’ve really had to forget about lazy mornings and get right into business, instead. I try to get as much done in the early morning hours, to make sure I’d have some time for relaxing in the evening. Now, my idea of relaxing consists of a glass of red wine, knitted socks and a good movie – NOT slaving away in the kitchen for several hours!

That’s why I am so happy about this recipe. It’s so simple I laughed out loud when I saw the ingredients! How come I hadn’t thought of this before? I guess somehow we tend to think “a proper meal” means a huge bunch of ingredients and at least 2 hours of prep time. Well, you’re not going to have to worry about those with this recipe. What’s your favorite side dish? I’m sure we all love a wonderful potato dish but those can be a little tricky for us who are trying to avoid having too much carbs.

Cauliflower rice (or rice cauliflower, as some call it) is absolutely delish and a great low carb option that pairs really well with almost any entree. I had heard of it quite a while ago already, but somehow I had completely forgotten about its existence. Until last week, when I was searching for new side dish and my friend mentioned this one to me. It seemed so easy to make, I just had to give it a try. I’m so glad I did!

Ever heard of honey, lemon and ginger tea? It is supposed to be one of the most calming teas, as well as wonderful for soothing a sore throat. It is full of wonderful flavors that really give a sense of calm and peacefulness. I love a good cup of tea on a cold (or even warm!) evening to really give myself some relaxation time. Well, now you can have all those soothing flavors in your favorite dish. I absolutely love chicken and have it just about every day. Pork, ground beef, steaks… they are all “special occasion” foods to me. I do not eat them with regularity. But chicken, oh my. Every single day! That is why I am always trying to come up with new and improved ways to make it. I do not want to get bored with the foods I make so I try to switch it up. Recently as I was enjoying a cup of tea, I wondered what would happen if I infused all those delicious flavors into a piece of chicken. Well, I wonder no more. It is absolutely amazing!
