My husband loves enchiladas and we had a special day coming up, so I wanted to make sure this meal was going to blow his mind. I posted a simple question on social media (isn’t that what you do these days, whenever you’re trying to find a solution to a problem?)

I asked, “what is your favorite enchilada recipe, and why” – and I must have gotten a dozen replies right off the bat! People were sending me their favorite recipes and very thorough explanations of why they thought theirs was the best in the whole universe.

Of course this meant I had a big problem. How was I going to determine which one of these was the tastiest recipe? I didn’t have the time to test all of them! So all I could do was rely on my friends’ argumentation. And this one made sense; one of my friends had replaced ground beef with flank steak. He said it made a huge difference, even though the rest of the ingredients were pretty much the same he had always used.

We all know Philadelphia is known for their scrumptious cheese steaks. Meanwhile Italian’s are known for their oh-so-cheesy calzones. Why not combine the two for a delectable-duo of flavors that’ll be an absolute hit at any dinner party? Re-create your favorite flavors in your cheesy cheese steak easily at home with this calzone-style version.

Use a package of Pillsbury refrigerated pizza dough for a short-cut to the time-consuming homemade version. Customize your calzone to your liking with a choice of provolone or American cheese. This makes a delicious quick lunch the following day as it re-heats well! Enjoy!

A Super-Tasty Stew With a Curious Name

Ropa Vieja literally means “old clothes” in Spanish, and though, as the name implies, it may not be the most elegant-looking dish in the world, but it has a nice splash of color and is chock full of great, savory Latin American flavor. And this version for the slow cooker makes putting it together super-easy and leaves the meat as tender as ever.

 

Some days, you just want a nice escape.  And though I enjoy my escapists shows and love reading a good book, now and then, eating the right sort of meal can be a nice adventure to another world, too.  I broke out my Crock-Pot yesterday morning to put this Slow Cooker Ropa Vieja together, and by the evening, I was enjoying a delicious stew and imagining myself in some humble but bustling cafe in Puerto Rico.  Latin America does know how to do comfort food.

London broil is a sadly all too often neglected cut of meat, but with the right marinade (and a little patience for it to do its work), you can have a tender, savory main course that goes well with a variety of sides and juicy extras.  This Marinated London Broil makes for a great, hearty meal with the family; expand it, and you have a gourmet main dish for a larger party.

 

Mother often cooked London broil for supper when she wanted to serve a hearty, beef-based meal that made plenty of leftovers.  Serving everyone a few slices of London broil meant no having to fuss over individual steaks for everyone and plenty more room on the plate for all the sides and extras that she wanted to make with it.  Leftover slices of London broil also make for good sandwiches the next day, particularly if you cook some onions and mushrooms to go with it.
