adobo, Avocado, Mexican soup, mexican tortilla soup, Tortilla soup

Any authentic Spanish restaurant, will know that Tortilla Soup should be on the menu.  With cheesy floating bits of meaty chicken, and creamy chunks of avocado, it’s no wonder how long it has remained a favorite.

Did we mention the crispy bits of tortilla as well?  This recipe needs to simmer for quite some time, about 5 hours, and it tends to make about 12 servings.  Enjoy!

There’s many good restaurants serving this popular appetizer, it’s a wonder more people aren’t making it… until they found out how. This easy recipe takes only 6 ingredients, which is hard to believe since the end result is so incredibly tasty! These aren’t deep fried like they usually are in the restaurants, but they’re just as delicious! A healthy alternative, dip them in Ranch or make your own favorite dipping sauce.

These egg rolls are super tasty and much healthier than their deep fried cousins. This time we are making them with avocado filling, but you could tweak the recipe as you please and adjust it to your taste. Before you do that – did you know that avocado is good for your skin and hair, and it can also lower your cholesterol levels? Avocados contain lots of good fats, plus they also taste really good, so I highly recommend using them in these egg rolls!

Are you getting tired of that oatmeal breakfast, or the green bean salad you always pack for lunch? How about making a delicious sandwich instead?

I know what you’re thinking now; “Oh, but sandwiches are not very healthy, are they?” Well, they sure can be! Especially if you follow this recipe. Avocado and tomato, with a bit of mozzarella in between. Healthy food doesn’t have to be tasteless! Not only is this quick and easy dish delish, it’s packed with powerful nutrients, vitamins, and healthy fats, to kick start your day!

You can double up on the health factor of this yummy sandwich by throwing it all together on a 12 -grain bread. The recipe calls for an entire avocado, per sandwich, so keep that in mind if you’re making more than one. Of course, you could also share one avocado between two sandwiches, and add more tomato instead.

Feel free to choose another type of cheese if mozzarella isn’t your thing. Whenever I make these for my family, I let everyone choose their favorite, or add a combination of different cheeses in each one.

Quick tip: You can omit the butter and use olive oil instead, to make this even healthier.

Adult Grilled Cheese, Avocado, breakfast, butter, cooking, cookware, dessert, dinner, food, French Bread, gastro, Gruyere cheese, lunch, McCormick black pepper, Monterey Jack cheese, recipe, sourdough bread, tomato

We’re calling this an adult grilled cheese but I bet your kids will like it just as much! There is no tastier snack or lunch than this one here – with different variations you can make this every day and still not get bored of it!

You can add bacon or any other lunch meat. I try not to throw any food away so I love using leftover chicken for this kind of stuff. It’s super delicious, plus a good way to keep your grocery bill smaller!

If you’d like, you can substitute the Monterey Jack cheese with your preferred higher end melting cheese I like Gruyere. These will take you back to your childhood but still have the adult palette in mind.

Avocado, breakfast, carrots, cooking, cookware, dessert, dinner, English cucumber, food, gastro, lettuce, lime, lunch, mint, mung bean sprouts, noodles, Prawn Summer Roll, prawns, recipe, rice paper wrappers, rice vermicelli noodles, scallions, shrimp

Holler if you like Asian food! I certainly do and I have always wished we had an Asian restaurant in my town. But since that hasn’t happened so far, I had to find a way to make something Asian myself – something that would look as pretty as it tastes! I never really thought about how easy summer rolls are to make until trying this recipe.

Summer rolls are something I always order when I go to Thai or Vietnamese restaurants, but I never thought of doing them myself. It must be that Asian mysteriousness, but once you try these you will be making them all the time.

Not only are they exotic and delicious but they are super healthy and very easy to prepare so you have the best of both worlds. This recipe immediately became one of my all time favorites!
