How To Turn A Weeknight Meal Into A Feast

Since getting married, my husband informed me that he likes turkey more than ham.  So we now buy turkey from the deli instead of the usual ham I grew up with.

I do not mind because I truly like all the options, but I miss ham every now and then and will even stop by Subway to pick up a ham and cheese sub to satisfy that little ham craving I get every now and then. It is not like I cannot live without ham, I just really enjoy it every now and then.The kind of ham I really like is a good old fashioned honey spiral ham like the kind you get at Christmas parties. It is thick, juicy and is stuck to the bone.  The honey brown sugar coating on it is delicious and I love keeping any leftovers to throw in some soups such as split pea.

Now, the little problem with this ham is that it takes forever to make and occupies my oven for quite a while, which is kind of annoying.

Well, ladies and gentlemen, I have found the solution to that: slow cooker honey ham.  It is juicy and delicious, just as if it were out of the oven!

What Are You Having For Dinner Tonight?

When I am looking for recipes that give me a nostalgic feeling I often turn to stuffed green peppers.

As a kid, both my mother and grandmother would make these little gems of goodness. You would think that stuffed peppers would take a long time to make but they honestly don’t. They certainly taste like you’ve been slaving away in the kitchen. I adore the recipe that I came across on the next page as it is very easy to follow and the ingredients are quite simple. You’ll be serving up some stuffed pepper smiles in no time flat! So, what are you waiting for?

Have you ever wanted something different than the norm? We often have taco Tuesdays at my house and I tend to make the same spread.

We will have taco shells, taco fixins’, rice, and refried beans. Well, lately I’ve been trying to eat fewer carbs and sugar so I set out on a search for taco shells that were low carb. Guess what I found? A recipe for taco shells that are NO CARB. How cool is that?! And get this, they are super easy to make and only contain one ingredient. Just one! I’m sure most of you are well aware of what it’s like to constantly battle with time. I know they say the most successful people in the world have the exact same hours in a day as all of us, but it sure doesn’t always feel that way!

That Meringue Takes This Key Lime Pie To The Next Level

It’s hard to forget the first time I ever tasted key lime pie. I was 10, and for some reason I had never even heard of this wonderful dessert before. My parents took me to this small, family-owned restaurant during our vacation. I was looking at the menu and I thought it sounded really weird that they were serving a pie with keys in it. Haha! It’s funny how kids think sometimes, isn’t it? My mother explained what the name was about, and I really wanted to give it a try.

Oh boy, it was delicious! It was one of those flavors I will never forget. I even got to meet the lovely lady who made the pie. She was the grandma of the family – she and her husband had started the restaurant decades ago, and she still came in every day to make the most amazing desserts for their customers.

When I grew up and got interested in baking, I decided I had to try and make key lime pie just as delicious some day. This recipe is it! The meringue on top makes this even more special, and every time I have a slice of this pie, it takes me right back to that day of our vacation.

I do love chicken pretty much any way it’s prepared, but it’s so much fun trying to find new ways to cook something even more delicious. It’s a never-ending game, right? Even if you tried a new chicken recipe twice a week, there’s always going to be new ones. And I’m more than ok with that! Who wouldn’t love trying tasty meals and making their family happy?

My best friend was from a very loud and loving Italian family, so I was often invited for dinner and I learned to love all the traditional dishes.
