I’ve always been a big fan of mixing and matching all kinds of things. Clothing, cross-over music, green eye-shadow with blue mascara… ok, let’s not go there.

I know “the youngsters” are really into all kinds of 80’s stuff but I’ve done it once and I’d rather leave it at that. Back to mixing and matching but let’s talk about food!

I love different cultures and especially the variety of dishes people make all over the world. I’ve often thought, I wish there was a way to combine the best of the best, and turn them into the ultimate meal! Well, who says you can’t do it? This recipe sure does it in the tastiest way possible! Ladies and gents, these pizza-dillas are amazing. They are exactly what you need in your life right now, and you don’t have to worry about your calorie intake since these are pretty lean, believe it or not!

About a few months ago, my husband and I went to visit my mother in law and her family outside of Atlanta, Georgia. The town she lives in is a small hillbilly town where everyone knows each other. There was only one hotel in the area and just one supermarket. There are a few shops and under 10 restaurants in the whole town. It really seemed so out of place right next to the hustle and bustle of Atlanta, but we knew it would be a pretty cool town if we stuck around.

 

Anyways, when we showed up, I had come down with a case of Whooping Cough. I was coughing left and right and had an upset stomach every time my cough came back. I even had to get to a CVS (mind you, outside of the town because they didn’t’ have any there) to get some meds at 2am. On the last day we were there, my mother in law felt so bad that I was so sick that she made me her signature dinner. And guess what? For the rest of the day I had no cough. I had never eaten it in my life and knew I wanted to make it at home.
