Fluffy meringue tops this delicious chocolate cake.

I believe that when it comes to desserts, you really don’t choose. You will eat anything that tastes sweet even if it involves your not-so-favorite ingredient. For example, while I love them, I am not too fond of pineapples in desserts. But whenever my Mom serves her pineapple upside down cake, I just forget my words and eat a couple of slices. It’s dessert! For me, you will always want desserts.

Recently, my husband and I visited a couple of friends whom we haven’t seen for a long time. They invited us for dinner so we could catch up. We left our kids with my brothers, and they were more than happy to be able to play with their cousin.

We had steak and roasted vegetables for dinner, along with the creamiest mashed potatoes. After dinner, we moved into the family room for our after-dinner dessert and coffee. We had chocolate meringue cake for dessert.

For some reason, I am not a fan of chocolate meringue cake. I lemon meringue and even apple meringue, but chocolate, no. I didn’t like the taste of chocolate combined with the taste of meringue.

But that particular chocolate meringue cake that my friend served to us was an exception. The chocolate was so moist and dense; and the meringue on top has a different texture than most meringue toppings. I admit that I had a couple of small slices.

The cake was too rich that you would only want a small piece. But then you would want another small piece because you’d feel deprived. I think I have a love-hate relationship with this amazing meringue cake!

A spicy bundt cake that embraces the essence of chai tea.

Sometimes, the best things in life are not the ones that give you comfort. Sometimes, it’s the ones that dare you to become more than what you are and that challenge you to reach for something bigger or try for something else you haven’t tried before. It’s the ones that dare you to push better and harder if it’s for the good of the ones you love. Just like what happened when my husband and I moved away from our comfort zones to start a family.

My husband and I both grew up in closely knit families. Leaving for college was a bit difficult for me even though I wanted my freedom. The same happened with him because that’s how we were brought up.

When we got married, we lived in his state. His parents had a house built up that we would have rented if we decided to stay there. But the opportunities for both of us were in another state.

We left because we knew it was not just for us starting thereon. Once we had a family, we needed all the opportunities we could get. So we grabbed them and started another life in another town.

It was a whole lot of a new adventure for us,. We were able to adjust perfectly. Now, I am glad we did because it was an advantage for my little family.

Just like this chai spice cake. It might not be your typical cake because it has a stronger flavor and a bit different, but it’s so worth it. It offers something new that you will easily fall in love with.

Making dessert in the slow cooker is my favorite thing.

Time and time again I have told you all about my love for apples.  Whether that may be apples in the form of just a fruit snack, or applesauce, or better yet, a dessert.  I love apple bread, apple cake, apple crisp and apple pie.  All of them take me to apple heaven and with a scoop of ice cream? Oh man, you cannot go wrong with that! You also may not want to speak to me until I am done and do not dare take a bite out of mine… make your own!

I absolutely love this recipe specifically because it is not only an apple cobbler, but it is made in the crock pot! I mean, can it get any easier or better than my favorite kind of recipe dumped in a crock pot and then I have loads and loads of it when I come home from work and am ready to enjoy it!

One night I even had a sleepover with my sisters, we made this and then dumped a whole pint of ice cream over this! We just let it melt and get all soft and wonderful until we were ready to eat it.  Boy oh boy was it good, we ate it to the very last bite!

My husband birthday was just last week. Prior to that week, I asked him if he wanted a celebration with just the family or at least with friends. He told me that on the day of his birthday, he only wanted it to be with the family. He can always celebrate with his friends the next day. Touched by what he said, I asked him if he has a specific request for a birthday cake because I wouldn’t allow him to buy cake outside. He said he just wanted it to be chocolaty.

I searched for a new chocolate cake recipe online because I wanted to bake him something new. A special cake for a special day; isn’t that sweet? And then I found this chocolate hazelnut recipe from Bake Or Break; I knew I was saved.

I found it amusing that the story of the cake was also related to someone’s birthday. No wonder it came out on my Google search. But I was glad because this has got to be one of the best cakes I have ever made.

And the birthday boy… er… birthday guy thought so too! He had a wonderful time eating his chocolate cake and it can be seen on his face. But at the end of the day, he told me that he had such a fun time because he celebrated it with us, his family.

This chocolate hazelnut cake is really a recipe for your family. So go ahead and make this for them! This is best shared with the ones you love.

My family just had a two-day vacation at my husband’s aunt’s house. She called and told my husband she missed us all, and that she wanted to see our kids. It has been a few months since she last saw them. It was during one of the reunions in my husband’s side of the family. She is my husband’s favorite aunt, the one who took care of him like a mama when he was a kid. So we packed our bags and went on a road trip. She lived a few hours away from where we lived.

It has been so long since we had a road trip like that and it felt so good. My family and I were so happy that we were singing at the top of our lungs while we’re driving. Even the kids were singing along with us even though they didn’t know some of the songs.

My husband was a fan of pop rock songs. And I grew up listening to the music of the 80s and the 90s, so we almost have the same tastes in music. I am pretty sure our boys would be influenced by this soon.

When we arrived at his aunt’s house, she looked so happy that we were both glad we did our best to see her. We had a long catching up which we really enjoyed. She cooked us dinner and we had this most amazing vanilla bean cake that has a twist on it.

Family is really the most amazing thing in the world. And to share such a delicious dessert with them is nothing short of perfect.

The stickier the better!

Toffees aren’t really my thing. I wonder if you remember my slight discomfort to caramels; it’s actually the reason why I’m not a fan of toffees. They’re too sweet for my own liking. While I have a sweet tooth, I am more of a chocolate type of person. Chocolates have that other taste in them that counters the sweetness, while toffees are all sweet. I rarely make a toffee dessert, but when I do, that means I fell in love with it.

One fine morning, while I was having breakfast with my family, my husband asked if I could make a pudding for dinner. It was a weekend, and we usually have special desserts, so I didn’t expect him to ask for a simple pudding. But I said yes, because I had the perfect recipe to try in mind.

A friend called me a few days ago asking if I have tried the recipe she sent me weeks ago. I admitted that I haven’t because it wasn’t my cup of tea. She told me that she sent it to me for a reason, that’s why I should try it.

And I did; because of my family. My husband and kids both loved; they said the special sauce made it taste extraordinary. And I couldn’t agree more!

This cake tastes way better than the boxed stuff.

As a kid, we all had dreams that we want to fulfill. My dream job when I was in elementary was to become an astronaut. When I became older, I wanted to become an alien human, which meant I wanted to visit other planets as a “foreigner”.  Our childhood was meant to be the ideal stage in our lives. It’s that phase wherein we just dream big without worrying whether or not they would come true. Such a thing is a wonder of childhood.

My Mom used to discuss dreams with me and my brother. She never discouraged us about our dreams because she told us that nothing was impossible if you worked hard for it. Over a piece of yellow cake, my brother and I would always smile.

Now that I’m an adult with a family of my own, I already had a dose of real life. I knew what dreams would work and what dreams wouldn’t come true. But just like what my Mom did when I was a kid, I wouldn’t discourage my boys from dreaming.

The two of them wanted to be pirates for now. And if soon, they wanted to become Peter Pan and his lost boys, I wouldn’t say no to it. Because when they grow up, they will know what life is really about by themselves.

Life as an adult is really a pretty difficult path. But one thing is still for certain; yellow cakes still make me smile.
