I can’t think of a better way to start a weekend than making this pineapple chicken and serving it with Hawaiian music, in good company.
My husband and I often invite our friends over for dinner, and this is something I like to make on those occasions. The great thing about this recipe is that you can turn it into an appetizer or a main dish, depending on what type of chicken you use. For appetizers, I like to use drumsticks. For a full meal I make this with chicken thighs and serve it with rice, salad and homemade dinner rolls. Yum!
Ingredients
2 tbsp honey
1/3 cup Heinz 57 sauce
1 can of pineapple slices or chunks
2 tbsp pineapple juice
chicken- whatever you prefer- thighs, wings, drumsticks
Lawry’s seasoning
salt
Instructions:
Preheat oven to 375F. Spray a baking pan with cooking spray.
Season chicken with Lawry’s seasoning and salt on both sides. Place on the baking pan.
Bake seasoned chicken for 30 minutes, then remove from oven for basting.
Combine the Heinz 57, pineapple juice, and honey together. Brush the chicken with the sauce, put back in oven, wait ten minutes, brush on more sauce… repeat this until the sauce is all gone.
When you’ve baked the chicken for a total of 1 hour, put pineapple slices or chunks on top. Put chicken back in oven.
Wait an extra 2-3 minutes so pineapple slices get warm.
