It’s kind of like a loaded baked potato, only creamier, softer, and in much easier to devour casserole form. This is technically still a side, though with something this filling, you probably don’t need the main course to be anything too elaborate. Another great thing about this recipe is that I think it works perfectly as a breakfast dish! If you have leftover mashed potatoes from the night before, it’s going to be a breeze to put this together on a lovely Sunday morning.
I served mine with classic fried pork chops. No, it’s not the healthiest meal that I’ve ever had, but sometimes, you just need some satisfying soul food, am I right? Bon appetit!
Ingredients
4 pounds russet potatoes, peeled and diced
10-12 slices bacon, cooked, drained and crumbled
1 (8 oz.) package cream cheese, room temperature (I use Philadelphia)
2 cups cheddar cheese, divided
2/3 cup sour cream
1/2 cup milk or half-and-half
1/2 cup parmesan cheese, grated
1/4 cup (1/2 stick) unsalted butter, room temperature (I used Land O’Lakes)
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
kosher salt and freshly ground pepper, to taste
Instructions:
Place potatoes in a large pot and cover with 1-2 inches of cold water. Bring up to a boil, then reduce heat and cook for 20 minutes, or until fork tender.
Remove pot from heat, drain potatoes and return to empty pot. Preheat oven to 350º F.
Smash potatoes to desired consistency, season to taste with onion powder, garlic powder, salt and pepper.
Mix in cream cheese, sour cream, milk, parmesan cheese, butter and 1 cup cheddar cheese, then transfer to a 9×13-inch baking dish.
Sprinkle bacon and remaining cheddar cheese over the top and place in oven; bake for 15-20 minutes.
Remove from oven and let cool 5 minutes before serving.

Can I assume you don’t peel the potatoes?????
1st ingredient clearly states peeled and diced.
Not very healthy pealed. Working hard at loosing weight. We need to teach the young ones to eat healthy before they get to be old with bad knees, & high cholesterol like I had. Actually, I prefer Red potatoes unpeeled, & would use goat cheese, which has less fat.
Where it gives quantity of potatoes it says to peel and dice
Peeling the potatoes would be optional in practically any recipe; I rarely peel my potatoes for mashing, salads, baked, scalloped, soups, stews, etc.

Myself, personally, I think I would peel the potatoes if mashing them since you aren’t going to take them out of skin and put back in. Sounds yummy think I will try; but, not with skins.

The recipe calls for peeled, diced potatoes.
Use red potatoes or fingerlings, or young golden. I like the peels too.
I will use Ore-Ida’s Steam & Mash potatoes. So easy and good- and no peeling !

Did anybody get past the disrespectful comments to try this recipe yet? Some of you should be ashamed of yourself. It does seem to have plenty of cheeses. From now on peel and dice potatoes instead of each other.

Sarah & Sandra…..i would make a full batch of this….if too much, I think it should freeze well with no problems at all…in fact, you could reheat it in a
microwave or your oven…i youi remember to freeze it a proper dish…but even more important….just think of the time you will save preparing your next meal…..

I have made this several times just as the recipe states. Didn’t add or subtract or substitute any ingredients. There are only 3 of us and I made the full batch but before putting in a casserole dish I filled 6 ramekins to freeze and put the rest in a smaller dish. I thaw before I bake. Is really yummy and doesn’t get watery after freezing. The sour cram and cream cheese give it a really rich taste.

I make this all the time! Since starting a diet plan…I use riced cauliflower instead of potatoes… I also substitute coconut butter (Melt is the product name) and use coconut milk. Tastes great without all the added carbs.
It is your choice to peel or not! I don’t like the peeling so I peel mine. When I take this to potluck at church I do not peel them. God bless you all and please be kind to one another!
This is good if you scoop potatoe out if the skins then fill the skins with potatoes mixture and bake

People just want to fight. Pe, don’t peel, who cares? You’re going to eat it. Boys and men are fighting acwar overseas, people are homeless and don’t have a potatoes to peel or a pot to pee in and you all want to curse at each other about peeling or not peeling potatoes.
