Oh, I am definitely making a double batch, you can count on it!

If you want something a bit fancier than basic mashed potatoes for a good side dish, this Loaded Mashed Potato Casserole may be just right for you. It’s easy to make and loaded with savory flavor.

Hey, sometimes, mashed potatoes are just fine; other times, you want something a little more than that. This is a good dish when you’re in the latter situation. Oh, and did I mention it has cheese and plenty of bacon? Yummy! I can’t think of a dish that wouldn’t be twice as delicious when you add bacon in it – except maybe oatmeal, but I haven’t tried it yet so who knows? Haha!

The first time I ever made this it was a special occasion. My husband loved it so much that he now wants me to make it every week! He has even promised to help me out in the kitchen if I don’t have the time to do it by myself. What I didn’t tell him was that I loved this so much I couldn’t live without having this at least once a week!

Can I assume you don’t peel the potatoes?????

    • Cathy May 20, 2017 at 1:26 pm Reply

1st ingredient clearly states peeled and diced.

      • Cathy September 5, 2017 at 10:46 pm Reply

Not very healthy pealed. Working hard at loosing weight. We need to teach the young ones to eat healthy before they get to be old with bad knees, & high cholesterol like I had. Actually, I prefer Red potatoes unpeeled, & would use goat cheese, which has less fat.

    • Alaskansourdough May 20, 2017 at 11:20 pm Reply

Where it gives quantity of potatoes it says to peel and dice

    • Karl E. Sparn, Jr. June 1, 2017 at 1:08 pm Reply

Peeling the potatoes would be optional in practically any recipe; I rarely peel my potatoes for mashing, salads, baked, scalloped, soups, stews, etc.

It says to peel the potatoes.

Myself, personally, I think I would peel the potatoes if mashing them since you aren’t going to take them out of skin and put back in. Sounds yummy think I will try; but, not with skins.

    • RHONDA September 2, 2017 at 3:00 am Reply

The skins provide ALOT of POTASSIUM!!!!!!!!!!!!

  3. Carolyn May 21, 2017 at 4:31 pm Reply

The recipe calls for peeled, diced potatoes.

    • cheryl December 5, 2017 at 5:15 pm Reply

Use red potatoes or fingerlings, or young golden. I like the peels too.

  4. Jeannie Bell June 1, 2017 at 2:12 am Reply

I will use Ore-Ida’s Steam & Mash potatoes. So easy and good- and no peeling !

  10. David July 16, 2017 at 1:09 am Reply

Did anybody get past the disrespectful comments to try this recipe yet? Some of you should be ashamed of yourself. It does seem to have plenty of cheeses. From now on peel and dice potatoes instead of each other.

Sarah & Sandra…..i would make a full batch of this….if too much, I think it should freeze well with no problems at all…in fact, you could reheat it in a
microwave or your oven…i youi remember to freeze it a proper dish…but even more important….just think of the time you will save preparing your next meal…..

  21. Josh August 23, 2017 at 1:23 am Reply

Sounds absolutely delicious. I cannot wait to try this!! ?

  23. Susan September 7, 2017 at 1:38 pm Reply

I have made this several times just as the recipe states. Didn’t add or subtract or substitute any ingredients. There are only 3 of us and I made the full batch but before putting in a casserole dish I filled 6 ramekins to freeze and put the rest in a smaller dish. I thaw before I bake. Is really yummy and doesn’t get watery after freezing. The sour cram and cream cheese give it a really rich taste.

    • Susan September 7, 2017 at 1:39 pm Reply

Sorry. Sour cream and cream cheese

  24. Marilyn September 27, 2017 at 6:12 pm Reply

I make this all the time! Since starting a diet plan…I use riced cauliflower instead of potatoes… I also substitute coconut butter (Melt is the product name) and use coconut milk. Tastes great without all the added carbs.

  28. J K Skelton October 5, 2017 at 3:16 pm Reply

It is your choice to peel or not! I don’t like the peeling so I peel mine. When I take this to potluck at church I do not peel them. God bless you all and please be kind to one another!

  29. Roxanne Pierce October 12, 2017 at 7:03 pm Reply

This is good if you scoop potatoe out if the skins then fill the skins with potatoes mixture and bake

  30. Carol November 6, 2017 at 8:54 pm Reply

Not everyone likes potatoes skins no matter how healthy they supposedly are. Some really rude comments on here.

  31. Laquetta November 24, 2017 at 2:54 pm Reply

People adjust recipes all the time it’s your casserole if you don’t want to peel the potatoes don’t peel the potatoes

  32. Judy December 10, 2017 at 9:41 pm Reply

People just want to fight. Pe, don’t peel, who cares? You’re going to eat it. Boys and men are fighting acwar overseas, people are homeless and don’t have a potatoes to peel or a pot to pee in and you all want to curse at each other about peeling or not peeling potatoes. Sad, sad state of affairs. May all your troubles be this serious and not like those suffering in the real world. Get some perspective and wife being so snarky. Merry Christmas anyhow.
