Great for when you want a healthy, relatively low-cal, filling homemade meal but are just too busy to spend all day standing over the stove.

I just love a good stew, don’t you?  Done right, it is something light and flavorful enough for a summer lunch and yet rich and soothing enough to warm you up on the chilliest winter nights.

Mother, God rest her sweet soul, frowned on using crock pots.  She insisted on doing everything the good old-fashioned way – and did it brilliantly.  But crock pots have their uses:  Do a small bit of prep the night before; drop all of the ingredients into the pot, plug it in, and just forget about it for eight hours.  By the time evening rolls around, with no further effort on your part, you have a nice, healthy, homemade meal.

If you are tired of falling back on store-bought frozen meals and are looking for a simple way to turn beef and veggies into a tasty dinner, this crock pot stew is for you! Just consider making a double batch… this is so tasty it will be gone in the blink of an eye!

        it’s there, you can use a cup of barley instead of potatoes.

      My Mom used to call it Hamburger soup. She added a chili brick to hers. There were 10 of us.

    2 pounds of hamburger is to much next time i make will use only 1 pound plus i used a table spoon of paula deens house seasoning when i browned the meat

      I interpreted it as two cups, but you can adjust it down a bit if that is too tomato-heavy for your tastes.

    Sounds good, but I wouldn’t put in packaged onion soup mix or bouillon cube because of MSG and I would use all organic meat and vegetables. It would still be delicious I’m sure. 🙂

    Is there a can of tomatoes in the soup? Looks like chunks of tomatoes in the pic but don’t see them in the recipe?

      I come from the south and we love our veggies. Use your favorites and it will be good. Yes it looks like tomatoes, I add my cabbage and okra as well. Have fun with and use your own twist on it, never a disappointment. Good luck!

    Skip the Barley and add the Pot. and at the end put in ex wide noodles..

      the key word here is HEALTHY….barley is the best choice for health. Skip the potatoes and pasta.

    My kids called it hobo stew. I used tomato soup or V8 juice in mine, potatoes and beans at times without the barley. Will have to try the barley.

    Pouring boiling ingredients into a cold crock pot could cause it to crack. I usually turn the pot to high while I am preparing the ingredients. I also have put the crock in the sink and filled with hot tap water.

      I use Organic beef broth in stead of Tomato of any kind. We don’t like tomato’s. And in place of barley, you can use spaghetti noodles brock into 1 to 1/2 inch pieces and throw in 20 minutes before you serve. Light and refreshing.

    Where’s the cabbage? If you don’t add 1/2 small head of cabbage, shredded, you can keep it to yourself.

    I have made this a couple times this winter and I enjoy it very much. I substitute lean ground turkey for the beef. I am a senior citizen living on my own so I divide it into serving size containers and freeze them. I have done this with a number of different crock-pot recipes, chili, chicken cacciatore and butternut squash bisque. It saved me from doing a lot of cooking and also helps me with portion control. I’ve also stopped buying ready meals that are full of salt and other additives.

    My family has used this recipe for YEARS! We call it , “Hamburger Soup”.

    Almost any vegetable can be added or deleted and it is still good. We like to switch from potatoes to noodles or macaroni sometimes. Whatever is handy!

    I have added 1lb of fresh mushrooms during browning the hamburger & onions. I also added Lima beans. I also used a dash of some Scotch pepper sauce, that we picked up in Bermuda. It turned out EXCELLENT. My favorite soup, Beef, Vegetable, Barley.

    My Grandma used to make this for us once or twice a month. She called it ‘depression soup’. We all loved it! In lieu of fresh veggies she would use a can of Veg-All to save cooking time for short notice meals. Still tasted wonderful. It was one of our comfort foods growing up.

    You don’t use the whole package of soup it’s two tablespoons. Just don’t use salt to taste or only use one tablespoon of onion soup taste it that’s what you normally do when cooking

    Most times I use chili meat or chopped steak. You can add just about anything. The Barley has Gluten in it so watch out serving to anyone with Celiac Disease. I just leave the barley out. If I need for it to make more I will add rice, but usually only meat, mixed vegs, beef broth, and potatoes.

    We grew up on this awesome soup! Of course no crockpots then,lol. Made the old fashion way! I was about 11 when I started making this as our parents worked and we took turns cooking things they knew we could handle! Such a comfort food looking back now! Have to make this as I know they will love it.

    I always use a large can (1 quart) of stewed tomatoes instead of the juice or paste and we called it January soup because it was so good in the winter. It has always been our favourite soup.
