As a little girl, I was never very fond of zucchini. Why? Because my mama put it in EVERYTHING. She always planted about one million zucchini plants in our garden each year. Seriously, we always had an overabundance of gigantic zucchinis lying around. The only thing I really enjoyed was her chocolate chip zucchini bread…until now. Mom made a delicious zucchini casserole the other night and it was spectacular.

Serve As a Side Dish Or Turn Into a Warm Meal!

I have a special cooking philosophy; the faster and easier, the better. It has gotten me through all these years and I intend to follow it for as long as I shall live, haha!

Oh well, I do make more complicated meals occasionally but when you’re trying to serve home cooked meals for your husband and kids every single day (on top of working, five days a week) it is definitely a rare occasion. This recipe, however, is one of my favorites and it’s a massive hit, every time I make it.

What I love about this is that this makes a wonderful, cold pasta salad for your BBQ or just a really nice side dish on a weeknight. But if you want to, you can easily turn this into a warm meal! I actually call this the healthy mac and cheese when I do that.

If you choose whole grain pasta for this and add some of your favorite veggies (sometimes I do like to add red pepper), you could basically call this a diet meal! Well, maybe not, but it’s definitely delicious.

Stop Spending a Fortune On Store-Bought!

Our local outdoors & sports store is going to take a massive financial hit now that I have this awesome recipe for homemade beef jerky!

My husband practically eats beef jerky for breakfast, lunch and dinner. So far he has picked up his favorite brand from that local store of ours, but after I made this the first time he said there’s no going back. I have to admit; I’ve never been that big of a fan of beef jerky but this one was super delicious!

Don’t worry if you don’t have a dehydrator. Yes, it would come in handy when making this, but you can make this in your oven, too! In fact, that’s how I did it and it turned out perfect. I did check on it a few times while cooking, and you should too. Even though you’ll get instructions on the temperature and time, all ovens are a little bit different and you can also adjust the time based on how you like your beef jerky.

Feel free to adjust the seasonings, too, but I would highly recommend trying the recipe as is, first. For us it was perfect!
