Yesterday, my neighbor Anne burst through my front door and yelled out, “YOU HAVE TO TRY THIS RECIPE.”  I rolled my eyes, because yeah, that’s Anne to think that every one of her newfangled recipes is the best ever.  She opened my cabinets and pulled out a plate and then completely messed up my organized utensils drawer looking for a serving spoon.  She scooped up a hefty amount of casserole and plopped it on the dish.  She put it on a fork and hand fed it to me. And guess what.

It was GOOD.  It was the best cheesy hash brown casserole dish I had ever made.  It was gooey, had the perfect crunch and a beautiful golden cheesy crust over the top.  It was not overly salty or lacking in flavor.  I knew immediately I needed to keep the rest of this as well as the recipe to serve my husband for dinner.  He is the number one hash brown fan in the world.  My goodness, that man can eat it at every meal. Needless to say, he was thrilled when he returned home from work to find this.  He ate it straight out of the dish and didn’t even wait for the chicken I was making to be ready.  He filled up on this and then, had it for breakfast again the next morning.  It was a hit.

Do you love hot chocolate?  Yeah, me too.  Who doesn’t right? Every year, my husband and I make a large homemade batch of hot chocolate and hit the road.  We sip on it (along with munching on some type of cookies) and drive around our neighborhood looking at the Christmas lights.  It is a beautiful time of being together, enjoying a wonderful drink and just basking in the beauty of Christmastime. Anyway, enough about Christmas, let’s talk about this amazing cake.

My number one reason to love this cake is because it is a dump cake.  And I mean, who doesn’t love a cake that you can just throw all in one dish and let its magic happen?  It is so easy.  My second reason to love this cake is because it’s chocolate.  And we all know that is the best flavor of cake, hands down.  And lastly, this cake is topped with marshmallows.  Be still my heart.  It is my favorite type of cake to make with my favorite ingredients.  This is just perfect for me.  It’s easy to make and take to parties or enjoy alone on my couch while watching Little House on the Prairie. Yum, yum.

Say Hello To My New Best Casserole Friend!

I am not even kidding when I say I hate chopping. Ok, some of it may have to do with the fact that I’m the laziest person on Earth to take care of my kitchen knifes…

They’re not exactly in the sharpest possible condition, if you know what I mean! But still, it’s usually the lack of time that makes me want to avoid recipes where there’s a lot of chopping involved. After a long and busy workday I would simply rather do something else.

That’s one of the reasons I fell in love with this pork chop and rice casserole recipe. No chopping whatsoever! It’s not the only reason, though. I love recipes that make use of the most inexpensive and simple ingredients and still turn out unbelievably tasty. My husband is crazy about this dish – he could eat this for breakfast, lunch and dinner. Come to think of it, so could I!

About a week ago, my husband and I went to chilly New York City.  Being a southern girl from Florida, my blood was definitely not ready for the climate change.  It resulted in wet and cold toes I could no longer feel, chapped lips and my hair all in knots from the wind.  We were walking in the rain getting soaked when we decided we’d walk into the very next restaurant we would run into.  We found a diner and guess what they served…

Yep, French Toast Casserole.  It was a delicious, bake where the tops were toasty and had a little crunch, but the insides were nice and warm and soft.  The brown sugar streusel over the top was the perfect addition.  This was just what we needed to warm up on that chilly morning. So, as soon as I got home, I set out to find the perfect recipe, and here it is!  The creators of this recipe knew exactly what they were doing when they were putting it together.  This is the perfect Christmas morning breakfast.  It might even turn out to be a tradition for you, year after year as your kids and grandkids grow older.

This Hearty Meal Will Warm You Up On A Cold Night

I grew up on a small farm. My Dad would take care of the land and my Mom was taking care of us, as a stay-at-home mommy.

I didn’t always appreciate it – I thought my friends were so cool, having their own key to their house since their parents had office jobs and they weren’t home yet, when we got back from school. My friends could go through the fridge and eat whatever they found, on the couch watching TV. I “had to” go home and eat whatever Mom had cooked, and our whole family always ate together in the dining room.

Boy, do I feel different about my childhood now! It was such a blessing to be able to enjoy a homemade dinner every single day, and what made it even more special was that we really spent that moment together. It’s one of my most cherished memories, ever since my Dad passed away – and this beef stew recipe reminded me of all that. It was my Dad’s favorite!
