I Am So Making This For Dinner Tonight!

When it comes to dinner, I am all about making things as simple as possible without forgoing flavor and nutrition.

This cheesy, creamy chicken bake has a little bit of everything in it and it tastes great! You have a layer of Swiss cheese, Ritz crackers, and juicy chicken breasts all in one dish. Talk about a triple whammy of good food! My family really enjoys eating this meal, and I can totally understand why. I think you will be shocked over how simple it is to toss together.

I am not a huge fan of using boxed foods, but I have to say, the crackers in this casserole are really tasty. Plus, it makes making this meal even more simple. There is no hassle and it only takes a few minutes to prepare this. I would definitely call this bake a busy mom’s best friend!

Are you getting tired of having the same old, same old chicken? I love chicken dinners but I often find myself in a situation where I have the same handful of recipes, rotating over and over again. While there’s nothing wrong with repeating recipes your family loves, sometimes you just need a bit of a change. You know what I’m talking about, don’t you?

Last week I decided to try something different. I usually love making chicken casseroles because they’re creamy, easy to make, and I can hide all kinds of vegetables in there and my kids won’t even notice, haha! But I really didn’t feel like having another casserole that day, so I went ahead and got some chicken breasts.

While it may sound like a tiresome task to prepare each family member their own serving of chicken, it really isn’t! You can make this in 20 minutes, from start to finish, then just throw some salad on the side and you’ve got yourself an amazing dinner.

Ever heard of honey, lemon and ginger tea? It is supposed to be one of the most calming teas, as well as wonderful for soothing a sore throat. It is full of wonderful flavors that really give a sense of calm and peacefulness. I love a good cup of tea on a cold (or even warm!) evening to really give myself some relaxation time. Draw a bath and sit in there for a bit while sipping on anything honey, lemon, and ginger flavored? Yes, please!

 

Well, now you can have all those soothing flavors in your favorite dish. I absolutely love chicken and have it just about every day. Pork, ground beef, steaks… they are all “special occasion” foods to me. I do not eat them with regularity. But chicken, oh my. Every single day! That is why I am always trying to come up with new and improved ways to make it. I do not want to get bored with the foods I make so I try to switch it up. Recently as I was enjoying a cup of tea, I wondered what would happen if I infused all those delicious flavors into a piece of chicken. Well, I wonder no more. It is absolutely amazing!

What is a great dump meal? One that is full of creamy goodness and you have both your main meal and sides all in one dish. I used to think that would require so much cooking and prep time and was not really looking forward to that aspect of married life. I was afraid of spending way too much time cooking and cleaning up that tiny kitchen of mine. That is, until I received a wonderful gift at my bridal shower.

 

I remember being at my bridal shower, awaiting the time to open all the gifts. One after the other, they were gorgeous, but someone gave me the most practical of them all: a crock pot! I was kind of unsure as to how I was supposed to use it because I had never in my life seen one or tasted anything that was made in one. However, I decided to be adventurous and give it a go (at least adventurous for me!). I looked up recipes on Pinterest and found many good ones, one of my favorites being a creamy recipe of chicken and dumplings. I mean, how can you go wrong with such a simple and delicious recipe like that?!

My life is all about quick and easy recipes! At least on weekdays, when I am swamped with work.

I’ll save the more time consuming recipes for the weekend – although I must say this particular dish is so yummy, I would happily serve this for a special occasion! You only need a few minutes to prepare this, and just a half an hour in the oven to bake it. I call that a winner recipe for all the busy moms out there!

The original recipe used homemade buttermilk biscuits but since time is of the essence here, I used canned ones instead. This dish turned out so beautifully my husband would have eaten it all at once! I basically had to hide it from him before that happened… Feel free to add more of your favorite vegetables to make this even lighter, or just to change the flavors a little every time you make this.

Angel chicken was a concept I learned about when I was in Italy about 7 years ago. I was on a cruise through the Mediterranean for about 2 weeks and not only did we try foods from different cultures in the different countries, but the cruise also served food from the respective country we were at for the day. We had stopped in Florence and after a long day of exploring, made it back to the ship to shower and have dinner.

 

When we got to the table, our waiter offered us a new dish of angel chicken. I had no idea what that was, but since everything else did not appeal to me, I figured I would go with the new dish they were offering. When it got to the table, it was a delicious combination of white and pink sauce coating a bed of very thin angel hair spaghetti, then it had a chicken breast on top coated in the sauce as well with a very distinct Italian seasoning. It was really a very delicious and neat experience to have on that ship as their debut dish for the season. The dish was so good, as soon as I got home, it was the first meal I prepared.
