Better Than Your Mother’s – And Your Grandma’s!

Let me tell ya, I’ve seen a lot of weird recipe ingredients. I mean, really weird. But this is the first time I came across a recipe that uses Pepsi for pork roast!

It sounded so strange that I had to take a closer look. I have no idea what it is about Pepsi that makes the pork taste so delicious. Friends, this pork roast is so close to perfection, I can’t even describe it. The best part is, this is a slow cooker recipe! You literally just dump all the ingredients into your slow cooker and let it work its magic. When you check back after a few hours, you’ll have a delicious dinner waiting for you!

This is one of those recipes that turn out so amazing, you could serve this for a very special occasion. However, you’re going to love this so much that it will probably become your favorite weeknight dinner! I just made this last week and I’m already planning on making it again!

As kids, we all have our favorite food. Growing up in a family of really good cooks, my favorites varied from family to family. Whenever relatives visited us, they used to bring the food that they cooked the best. I used to love Aunt Beth’s desserts, Aunt Carmen’s casseroles, and of course my Mom’s cooking. Until now, I still think of it that way so my favorites still remained the same. I still ask for Aunt Beth’s pie whenever she called that she would visit. I still request for Aunt Carmen to make me one of her casseroles whenever she comes and visits.

 

Whenever food was the topic, I couldn’t help but think of Grandma. I have to say sorry to my mother and my aunts if they happen to read this, but Grandma’s still the best. No one could compare to the dishes that she used to make for all of us. She was a bit stern, yes, most especially when it came to food. She always wanted us to eat only meals with the freshest ingredients. When she let us watch her, we always had to keep quiet, listen, and watch attentively. She made the most delicious food. Even her experiments all tasted great. This recipe from Southern Bite reminds me of those times when we fought over who got to taste her dishes first. It’s a meal full of nothing but goodness that will probably remind you a bit of your yesterdays.

Quick Tip: You may require a few more cups of broth. Baking this will cause most of the moisture to absorb, so make sure that you’ve got enough liquid in there. You don’t want dry dressing.

Kids are so difficult to feed. They love to eat the junk, the stuff that is bad for them and the stuff that makes you look like a bad parent for feeding them. I do not have children yet, but I have helped raise my siblings (I am much older than them) and I know what it is like to cook a meal with all the love in the world, only to find out that your little picky eater will not even take a bite. It is disappointing and annoying to say the least.

 

Now, I am always looking for Crock Pot meals that are delicious, filling and really have great flavor that I can save for days when I have kids, am tired and they do not want to cooperate with eating adult food. I do not mean just giving them mac and cheese, but giving them something that I like and is easy, and they also enjoy. One of those meals is this crock pot mushroom chicken. Some kids may be opposed to mushrooms because of how they look, but since this is made with cream of mushroom, I promise you once they taste this, they will not put their forks down.

Angel chicken was a concept I learned about when I was in Italy about 7 years ago. I was on a cruise through the Mediterranean for about 2 weeks and not only did we try foods from different cultures in the different countries, but the cruise also served food from the respective country we were at for the day. We had stopped in Florence and after a long day of exploring, made it back to the ship to shower and have dinner.

 

When we got to the table, our waiter offered us a new dish of angel chicken. I had no idea what that was, but since everything else did not appeal to me, I figured I would go with the new dish they were offering. When it got to the table, it was a delicious combination of white and pink sauce coating a bed of very thin angel hair spaghetti, then it had a chicken breast on top coated in the sauce as well with a very distinct Italian seasoning. It was really a very delicious and neat experience to have on that ship as their debut dish for the season. The dish was so good, as soon as I got home, it was the first meal I prepared.

My son is very picky when it comes to food. Sometimes it drives me crazy to try and figure out what to cook, besides the hotdogs that he would eat. He likes instant noodles a lot and that is why I have been looking for something with noodles, to satisfy his “delicate” appetite. A nice, hearty casserole sounded like a very good idea, now that we’re into the colder months of the year.

 

I found this Chicken Noodle Casserole recipe and it is such a lifesaver! My son actually loves eating it and it’s one of his favorite dishes now. I am just so happy that he is eating something that’s good for him, and something that he actually loves. The Rotisserie Chicken, as recommended by Holly, really works wonders with this recipe. You can also use leftovers from a previous meal since the recipe needs pre-cooked chicken. You probably won’t believe it but you only need five minutes to prepare this dish!

I took a lot of psychology classes in college because I found it interesting to learn how people’s minds worked. There was this one activity where everyone in class had to bring something that described him or her. One of my classmates, the “heartthrob” in class, was called first. He brought his backpack in front and took out a plastic bag. He didn’t open it, saying it would stink. It happened to be cordon bleu. Something that he bought two weeks ago and never took out from his backpack.

 

He said he was like the cordon bleu. He “tasted” so good with all the goodness inside him, but everyone always appreciated just his looks. And because of that, what was inside him remained hidden. It would soon rot because no one dared to look at what’s in there. All I could say was—I’d never look at cordon bleu the same way again.

OK, back on track with the recipe. Sorry, I get easily sidetracked. So anyway, I was looking through my box of recipes cards and came across my super easy-to-make slow cooker beef stroganoff. I absolutely adore this recipe because it’s oh so heavenly on the palate and very filling. So naturally, I had to share my secret with you guys. Enjoy!
