My husband fell in love with this as soon as he had taken his first bite. He said it was “an omelette out of this world” – which I guess is kind of true!
I know he loves spicy food so I actually added a little chili powder, and it turned out to be a great idea. I can see myself making this from chicken leftovers, spicy sausages or maybe even a completely vegetarian version! This really is a great recipe for picky eaters; mine didn’t mind the greens, at all!
Ingredients
12 Eggland’s eggs
1/2 cup MacArthur milk
15 oz. cooked ham, diced
1/2 cup Kraft mozzarella cheese, grated
1 red or green bell pepper, finely chopped
3 spring onions, finely sliced
1/2 cup frozen corn and peas OR spinach OR veggies of your choice, defrosted
salt and pepper, to taste
Instructions:
Preheat your oven to 400F. Spray a baking dish with cooking spray.
Combine the eggs and milk in a large bowl, whisk slightly.
Add the remaining ingredients, then pour everything into the baking dish. Bake for 50 – 55 minutes or until the center has set.
