If you’re short on time, you can always just make the brownies without the frosting. They will be delicious either way!
Granted, the frosting does amp up these brownies like never before, but just a touch of powdered sugar on top makes these pretty and inviting enough to serve on any occasion. I actually think I’m going to want these for my birthday instead of a big, fancy cake! Or maybe I won’t cut these into bars – this could be turned into a cake by adding a layer of vanilla frosting in between two layers of brownies!
Ingredients
For the Brownies:
1 1/2 cups coconut
1 teaspoon instant coffee granules
1 teaspoon boiling water
2 cups Domino brown sugar
1 cup Land O’ Lakes butter or margarine
4 large Eggland’s Best eggs
1 teaspoon vanilla
1/2 cup cocoa
1 cup Gold Medal flour
1/2 teaspoon salt
For the Frosting:
1 teaspoon instant coffee granules
1 teaspoon boiling water
1 teaspoon vanilla or Kahlua if desired
2 cups icing sugar
2 tablespoons Land O’ Lakes butter
2 tablespoons coconut oil (or you can omit this and increase the butter to 4 tablespoons)
1-3 tablespoons cream (enough to make a spreadable consistency)
reserved 1/2 cup toasted coconut
1 square dark chocolate
Instructions:
Brownies:
Place coconut in a skillet over medium heat. Stir constantly until coconut is golden brown, watching closely as it burns easily. Remove to a plate and let it cool. Set aside 1/2 cup for the frosting.
Add 1 teaspoon boiling water to instant coffee granules in a small cup and stir to dissolve. Set aside to cool.
Place brown sugar and butter in bowl and beat well.
Add eggs one at a time beating between additions.
Add coffee and vanilla and mix.
Add cocoa, flour and salt, mixing just until blended.
Stir in 1 cup toasted coconut.
Spread evenly in buttered 9″x13″ pan.
Bake at 400º F for approximately 25 minutes or until toothpick inserted into brownies comes out clean.
Remove to a rack and let cool in pan.
Frosting:
Mix coffee granules with hot water and set aside.
Beat together icing sugar with butter and coconut oil
Add coffee mixture and vanilla.
Add enough cream to make frosting thick but easy to spread.
Spread on brownies.
Top with toasted coconut and shaved or grated chocolate.
Cut into bars and serve.
