Ingredients
6 yellow bell peppers, tops cut off, membranes and seeds removed
2 cups cooked chicken, shredded
2 cups chicken broth
1 cup uncooked rice
1/2 cup cheddar cheese, grated
1/4 cup marinara sauce
1 carrot, finely chopped
1 rib celery, finely chopped
1/2 white onion, finely chopped
2 tablespoons unsalted butter
3/4 teaspoon garlic powder
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
kosher salt and freshly ground pepper, to taste
fresh parsley, chopped, garnish
Quick Tip: This recipe calls for yellow pepper, but orange or red is also nice.
