Mmm, So Refreshing…A Nice Treat for a Warm Day

I really like the mixture of sweet and tart, crisp and soothing. And it being so simple didn’t hurt–just let the freezer do its thing and, voila! I always enjoyed popsicles when I was little, though I have to admit that I sometimes wished that I could tweak the flavor a bit.
Well, now I can–and now you can. I think that this simple recipe is delicious as-is, but you can easily go with more or less sugar, more or less lime juice, etc., as you like. How sweet is that?
Ingredients
1/3 cup sugar
Kosher salt
1 cup raspberries (by volume; 4 ounces by weight)
3 hibiscus tea bags
1/4 cup fresh lime juice
popsicle sticks & molds
Directions
(1) Bring 3 cups of water to a boil. Remove from heat and stir in the sugar and a pinch of salt. Add the raspberries and the tea bags. Steep the tea bags for 5 minutes; remove the bags and discard.
(2) Refrigerate the tea until cool, 1 to 2 hours. Stir in the lime juice.
(3) Pour the mixture into 10 3-ounce or 8 4-ounce ice-pop molds, dividing evenly. Insert the ice-pop sticks and freeze until firm, at least 4 hours and up to 4 days.

Quick tip: Have some of these popsicles ready in the freezer all the time, and you’ll have a healthier treat instead of chocolate or candy, when you feel the craving!
