During holidays, different people invite you to different parties.

And since they’re all your friends, you will say yes to all. So there’s always that day where you have to binge on food without really wanting to—different friends equals different specialties. And if you don’t taste their specialties, they’ll feed bad. It so happened that I have a certain group of friends where in lasagna is everyone’s specialty dish. So there is this one holiday that I’m lasagna-binging.

Everyone’s lasagna tasted great, but there’s one that particularly stood out because of its shape. Instead of in a large pan, the noodles were rolled and placed on tiny baking cups. The sauce was poured in between them, as well as cheese, and they’re baked in the oven. When they came out of the oven, they looked like tiny cupcakes. My friend called it her upside down baked lasagna. It’s kinda similar to this recipe that I found on Facebook.

You May Never Need Another Lasagna Recipe Again

Lasagna will always be the star of the show even if there is tons of food on the supper table. It’s a classic pasta dish, and classic pasta dishes are there at the top of the food hierarchy. My family loves pasta dishes so much, specifically lasagna; and they will be the first ones to line up for it. My recent lasagna recipe is a bit different than my usual version. Well, at least when it comes to how they look. I still followed the recipe of my Mom, but the method was different.

Lasagna rolls. Yes, that’s what I did for my last lasagna recipe. I just had to try it because I got curious. My husband even helped me make the lasagna rolls. Our kids were at the kitchen table with their art materials while the husband and I were at the kitchen counter, rolling lasagna. It’s a picturesque family photo, isn’t it?

My husband and I had fun making those lasagna rolls. I think it made a pretty good bonding activity for the four of us. It’s just that sometimes, the children would look at us as if they couldn’t understand why their parents were acting that way. Our kids also loved the lasagna rolls! It was a bit messy though because they were trying to unroll them, but yes, it was a hit to my family!

Quick Tip: After the noodles are done boiling, drain and separate them and then let them cool for a few minutes before rolling.

I love a good Italian meal. Oh gosh, how I love when my husband tells me that he is in the mood for Italian! With him, it does not come often. He is just not a pasta kind of guy. He likes other things and although he will eat Italian, it is definitely not his favorite. That is why when he tells me he is in for some good Italian cuisine, I jump at the opportunity. A lot of times, we go to my favorite restaurant, Mike’s (ironically, that is my husband’s name too!) and I get a classic ravioli or maybe a lasagna.

 

This last time we visited my favorite restaurant (in the world!!), as the waitress was passing out the garlic rolls, she told me that they had a new special. She knows I love lasagna so she thought I would like this: lasagna roll-ups. Yep, they are kind of like fruit roll ups, but they are even more delicious. They take the layer of lasagna noodles, and add the ricotta cheese mixture as well as tomato sauce and meat and then roll them up and bake them in a casserole dish. It is a neat way to serve something so delicious!
