Here comes the bride, all dressed in meatballs… Wait. What? Wow, we are so impressed by this Italian Wedding soup that we’re getting our songs mixed up! This soup is a classic and for good reason: it tastes amazing! Paired up with a slice of crusty Italian bread, you have yourself the perfect cold day meal. Of course, my family chooses to nosh on this savory soup at any time during the year.

Have you ever had a soup that tastes so stinkin’ good you just have to go for a second or third bowl? This is that soup. We guarantee, if you happen to have any leftovers, you’ll be making a meal out of them the very next day. That is, of course, you don’t gobble them up during your Midnight snacking extravaganza.

One of the heartiest and warming soups out there (and one of my persoanl favorite) Italian wedding soup is surprisingly easy to put together.

If you don’t have access to endives, spinach makes a wonderful substitute.  This recipe yields about 8 servings and only takes about 20 minutes to make.  This soup is perfect for a cold winter day, and to warm your bones.
