I love breakfast casseroles.  They are easy and delicious and make my life so simple.  I can prep the dish the night before and just get up early to set it on high and it will be ready in no time.  Or, I can set it on low before going to bed and I will be woken up by the delicious smell of breakfast being ready in the crock pot. Either of those options are more than fine with me!

My husband loves tater tots.  Now, I mean LOVES tater tots.  He would like me to include them in every breakfast meal he can get.  He also likes me to serve them as a side with burgers.  Weird?  Sure, but totally delicious in his opinion!  Tater tot casserole is a great way to get a good filling breakfast into your belly (and your family’s) without taking too much time.  But if you want to make it even better take that tater tot casserole and pop it into the crock pot.  In no time you will have an easy, nutritious and tasty meal ready to eat and will help you face your day with energy.  I think that is a keeper of a recipe!

Three weeks ago, I was out and about with my neighbor Anne buying Christmas presents.  We had hit all the sales and really been couponing and doing really well with our holiday budgets.  Our husbands would be proud, we knew that for sure!  We had just spent thirty minutes in line and were both starved.  We knew we wanted a yummy lunch spot that was not too pricey so we went on Yelp and found a local new restaurant.

When we arrived, we noticed that they were serving bread to the tables next to us.  The best part was that it was served with olive oil, balsamic vinegar, and salt.  To me, that is the best way to enjoy a loaf of bread.  Each little loaf had an olive base and had toasty parmesan cheese over the top.  It was a perfect toasty bread to enjoy before a meal.  It held us over throughout the long wait of waiting for our food.  It was fun and delicious and right there on the spot, Anne looked up a recipe for this bread on Pinterest.  We found the recipe and tried it once we got home.  It was delicious and perfectly toasty just like the one at the restaurant.

My husband and I have never been beach people.  We are more of mountains and hiking people than we are outdoorsy beach and sand people.  We really detest the mess of sand in our toes and then how it drags into the car.  We also hate being all messy and wet while driving home.  It is just uncomfortable and uneasy.

However, we have one exception for enjoying the beach.  That is, going to Hawaii.  Neither of us care for the beach, but we will make an exception to go to Hawaii and enjoy the weather there.  We do not mind getting ready to enjoy beach stuff if we are in the tropical place of Hawaii.  That is the most relaxing and amazing place to be.  As we prepare to get ready and travel to Hawaii this month, we are packing our bathing suits and looking forward to the food that is to come.  One of our favorite treats from our last trip there was some tasty pineapple coconut cookies.  They are light and chewy, have a lemony pineapple flavor, a sprinkle of coconut and a cherry on top.  The cherry on top sounds cliché but it really is not so.  It is the perfect treat for any afternoon by the pool or after a bike ride.

Crisp And Tender At The Same Time – These Potatoes Are Amazing!

You’ve probably tried a dozen different recipes for potatoes, haven’t you? I love potatoes – they are so incredibly versatile and you can make so many different kinds of side dishes using them, and only a few other ingredients. When I’m busy, I usually just boil or steam the potatoes but whenever I want something special, this is my go-to recipe.

This recipe isn’t as difficult or time consuming as one might think, looking at the picture. It only takes about 20 minutes of prep time, and then the oven will take care of the rest. As long as you can keep an eye on them while they’re baking, you’ll get a delicious and festive side dish with very little effort. I must say the Swedish have come up with pretty amazing recipes. Their meatballs are incredible, and these Hasselback potatoes are possibly even better!

For years, I’ve had an obsession with ranch dressing. I love the stuff! I eat it on many different foods including but not limited to tossed salad, French Fries, chicken wings, and pizza. However, there was just one problem, the fat, calories, and chemical ingredients that bog down store-bought Ranch dressing. I had no idea I was putting so much junk into my body. Some of the ingredients on the back of the Ranch dressing bottle are so hard to pronounce I could not even tell you what the heck they are.

That’s when I decided enough was enough and started to make my own ranch dressing. In fact, I make a lot of my own salad dressings. Really, to whip up your own salad dressings and dip is rather simple and requires basic ingredients that you probably already have in your kitchen. Now, this recipe calls for light mayo but I don’t use that but rather make my own mayo. You may do as you wish. Enjoy!

For years, my grandma would make massive batches of fruit butter like apple, peach, and pear. She had all three fruit trees on her large farm and would gather the fruit during the harvest season. My sisters and I got to help, each year. it was always a lot of fun. I was the rebel of the group and would often get scolded for climbing the trees like a little monkey. Grandma told me to climb the weeping willow tree and leave the delicate fruit branches alone LOL

Anyway, grandma would spend hours in the kitchen stirring and hovering over a large stock pot on her stove to ensure the fruit butter didn’t stick to the bottom of the kettle. Even though gram’s recipe for fruit butter was amazing I wanted an easier way to complete this process. The following recipe is for slow cooker peach butter and it couldn’t be any easier to whip up than this! Within hours you’ll have creamy, warm peach butter to spread on your biscuits, rolls, and sandwiches. And guess what? You won’t have to hover over a hot kettle all day to get it 🙂

As long as I can remember, my mother and grandmother were making pasta salads. It’s safe to assume that their mothers were doing the same before them. I always seem to make some form of pasta salad for BBQs and picnics. My husband absolutely adores macaroni salad. He likes his made with sugar though which isn’t something I particularly enjoy. However, I like to appeal to his taste buds and make him happy so I usually oblige his requests for a sugary mac salad. With that in mind, I was certain he would love this sweet fruity pasta salad.

You guys, I can’t decide whether this yummy pasta salad recipe is a side dish or a dessert. The flavors truly play upon your senses. It’s sweet and fruity yet carries the flavors of pasta. it’s trippy! One thing I am certain about is that this recipe is delicious. I took it to a church ladies gathering a few weeks ago and everyone was asking for the recipe. I felt pretty dang proud 🙂 Enjoy!
