This tasty casserole takes you straight back to the countryside.

I grew up on a small farm. I think I was a little spoiled – almost all of our food was homegrown, and I learned to appreciate meals that were made from scratch.

Back then you certainly weren’t able to make a lot of money with such a small farm. Well, you probably still aren’t. But our life was rich in other ways, and I consider it a luxury that my mother was there to cook all our meals, bake our own bread and take care of us kids and making sure we learn to understand where food comes from.

This cheesy onion and bread casserole was one of my father’s favorites. Mom would make this from stale bread (that she had, of course, baked herself) and onions that were grown in our backyard garden.

It’s such a simple casserole and you wouldn’t think much of it just by looking at the ingredients, but the flavor is outstanding! This is a staple in my family’s dinner routine now, and my kids love hearing the story behind it.
