9/10 Families Say This Is The BEST Enchilada Recipe

My husband loves enchiladas and we had a special day coming up, so I wanted to make sure this meal was going to blow his mind. I posted a simple question on social media (isn’t that what you do these days, whenever you’re trying to find a solution to a problem?)

I asked, “what is your favorite enchilada recipe, and why” – and I must have gotten a dozen replies right off the bat! People were sending me their favorite recipes and very thorough explanations of why they thought theirs was the best in the whole universe.

Of course this meant I had a big problem. How was I going to determine which one of these was the tastiest recipe? I didn’t have the time to test all of them! So all I could do was rely on my friends’ argumentation. And this one made sense; one of my friends had replaced ground beef with flank steak. He said it made a huge difference, even though the rest of the ingredients were pretty much the same he had always used.

The 1950’s were the golden era of recipes, if you ask me!

Let me be perfectly honest with you; I am a recipe freak. I mean that in the most positive way! I love collecting all kinds of recipes and I’m always ready to try something completely new and modern.

But there is a part of me that can never let go of those old staples – you know, the ones that have been around since you were a child. Occasionally I tweaks these old family favorites a little, just to see if they will turn up even more delicious with a modern twist.

And sometimes they do! I’ve come up with the most brilliant meals just by throwing in some new flavors, respecting the original recipe. But there are some recipes that you really should leave alone. This bread pudding is one of them! It is so perfect just the way it is that I don’t dare try tweaking it the slightest bit.

This is a recipe I found years ago, when my mother and I were trying to recreate grandma’s bread pudding. Sadly, we lost her original recipe when she passed, but this one is as close to it as it gets!

Yum Yum! I Wouldn’t Mind Having These Every Day Of The Week!

When my kiddos are out of school for summer break I often find myself at a stalemate for lunch ideas.

After going 9 months without having to worry about lunches for the majority of the time you need a little bit of inspiration. I don’t want to feed my babies peanut butter and jelly sandwiches every single day so it’s time to get creative. This recipe for mac ‘n cheese muffins is about as creative as one can get. I love how these yummy little treats taste. And yes, they are treats because they are super easy to make and look absolutely adorable.

If you have muffin tins you can easily make these yummy little gems.

You can’t go wrong with macaroni and cheese muffins. Enjoy!

This Amazing Cake Will Be The Star Of Your Next Party

The first time I had a lime cake was at my sister’s bridal shower. My cousin Jean is a wonderful cake baker and we asked her if she’d whip up her famous desserts for the event. Of course, she said that she would. If I can remember correctly there was a lime cake, strawberry, chocolate mocha, and a peanut butter cake. They looked so beautiful sitting on that dessert table. Perfect for a party!

I was instantly drawn to the lime cake. It was so moist and flavorful and the frosting was spiked with lime juice. My tongue was tantalized by the robust flavor.

The recipe on the next page is for a similar lime cake that is quite easy to make.

You are going to be excited about the outcome of your cakey creation. Enjoy!

This Cake Makes A Stunning Dessert Any Time Of Year

I love strawberry season! It’s such a joy to go to one of those pick-your-own strawberry patches and gather up a bushel or two of fresh berries.

Nothing at the grocery store can top their flavor! Where I live there are wild strawberries that grow in the forest. These are the BEST. They are so sweet and juicy. You have to keep an eye out for when they come up though and get them quickly because the animals like to eat them, too. I never in my life thought I’d be competing with deer for strawberries until I moved to Pennsylvania. The bears like ’em too!

This cake is super pretty and dainty so bringing it with you to a baby shower or bridal party is ideal.

Place a few mint sprigs on top for decoration if you’d like. Enjoy!

Quick Tip: You can mix a few reserved strawberries into your icing as the recipe suggests but I choose not to and saved the berries to be mixed with glaze and placed on top of the cake.

Stupid-easy corn casserole that’s even better than your mama’s!

When I was a kid my grandma would always serve creamed corn or creamed spinach with her dinners. I hated it.

She even served this dish called “wilted lettuce” and it was creamed with mayo or something. I don’t understand why grandma had to cream all of her food but she did. I don’t think it was the flavors that bothered me but rather the texture of the food. I just couldn’t handle the slippery, sliminess of it all. So, I’m super thankful for this southwestern creamed corn casserole1When you bake it, the texture totally changes. Yussss!

My husband really liked this casserole and has requested that I make it again and sometime very soon.

You got it, dude!

The KING Of All Potato Salads!

You can all have your macaroni salad and I’ll just sit in the corner with the bowl of spud salad and a spoon. Sound good?
