How To Make Cake #3
There’s no better time for this cake than NOW! Every year I get a huge amount of apples from the two trees in my backyard, and I’ve been trying out all kinds of new recipes.
However, my first apple recipe every year is always this one. It’s super easy to make, it’s old-fashioned, and you can serve it pretty much any time.
It’s the perfect cake to go with your morning coffee – or if you’re having a fancy dinner party, throw a scoop of ice cream on the side and your guests will be in dessert heaven.
Ingredients
6oz Land O’ Lakes butter (or margarine)
4oz soft brown sugar
3 Eggland’s eggs, beaten
8oz self-raising flour
1 teaspoon cinnamon
1 1/2 lb apples, peeled and chopped
1/4 cup (or a little more) apple juice or cider
Instructions:
Preheat the oven 320F.
Cream the margarine and sugar, by mixing them together with a wooden spoon, or in a food processor.
Beat the eggs into the mixture.
Mix the cinnamon into the flour.
Fold the flour and cinnamon into the mixture.
Add the apple juice or cider.
Mix in the apples.
Pour the mixture into the prepared cake tin.
Place in the oven and cook for about 60-70 minutes.
Allow to cool in the tin for 5 minutes, and then turn out on a rack.
