You’ll get about 4 to 6 good servings from this recipe but I guarantee everyone is going to want to have seconds!
My son does not like broccoli at all but he sure loves this casserole. I haven’t heard him complain about the broccoli in it, once! Of course you could also add different kinds of veggies to make this perfect for you and your family. Sometimes I use jasmine rice instead of whole grain, just because I really like the aroma.
Ingredients
4 chicken breasts, cooked and chopped
1 cup of whole grain rice, cooked and seasoned to taste
1 large head of broccoli, steamed
additional veggies of your choice (optional)
Mix together:
8 oz of Daisy sour cream
1 can of cream of mushroom OR cream of chicken soup
I packet of French Onion Soup Mix
Instructions:
Preheat oven to 350 degrees.
In a 9×13 casserole dish, add the rice then the broccoli, on top of the broccoli spread out the chicken bite sized chunks and top with the sourcream/creamed soup/Lipton mixture and spread evenly.
Bake until the casserole is cooked through out and then in the last five minutes add the French’s French Fried Onions and allow to brown.
