These cinnamon roll muffins with cream cheese frosting would make the perfect dessert for your holiday dinners!
If you decide to bake these in a mini muffin tin, you’ll get a wonderful treat for as many as 20 people (unless everyone wants to have two, which will probably happen!) or for a smaller crowd you can make 10 regular sized muffins. These are seriously addictive, though – don’t say I didn’t warn you!
Ingredients
For the muffins:
1 1/4 cups Gold Medal all-purpose flour
4 Tbsp Domino sugar
2 tsp baking powder
1/2 tsp salt
1/2 cup McArthur milk
1 large Eggland’s egg, beaten lightly
1/4 cup Land O’ Lakes butter, melted
1/2 tsp vanilla extract
For the swirl:
1/2 tsp ground cinnamon
2 Tbsp packed brown sugar
For the icing:
2 oz. Philadelphia cream cheese, at room temperature
3/4 Tbsp Land O’ Lakes butter, at room temperature
1/2 Tbsp to 1 Tbsp McArthur milk
1/4 tsp vanilla extract
3/4 cup Domino confectioner’s sugar, sifted
Instructions:
Preheat the oven to 350 F. Spray 20 mini muffin tins with cooking spray.
Combine the flour, sugar, baking powder and salt. In a separate bowl, whisk together the milk and egg. Slowly whisk in the butter and vanilla. Add these to the flour mixture, stir just until combined.
Combine the cinnamon and brown sugar, and gently stir those into the batter. Don’t overmix. Scoop by spoonfuls into the prepared muffin tins.
Bake in the preheated oven for 20 minutes or until the muffins bounce back to the touch and are baked throughout. If you’re using a regular-sized muffin tin, bake 25 to 30 minutes. Let cool.
Icing: Whisk together the cream cheese and butter until smooth. Whisk in 1/2 Tbsp of milk and the vanilla. Add the confectioner’s sugar and stir. Add more milk, as needed, to create a thick-but-pourable consistency. Remove the muffins from the tins, dip the tops in the frosting, then place them on a wire rack to give the frosting a chance to set. Serve immediately. Store extras in a sealed container at room temperature or in refrigerator.
