This awesome taco mac casserole is the answer to my prayers! I’ve made this a couple of times already and it turned out a huge success.
Both of my kids loved it, and it was super easy to double the ingredients so that we had plenty for seconds (and thirds…) Go with any type of salsa you prefer – we enjoy spicy food so I used the hottest salsa I could find. Serve this with some homemade bread and fresh, green salad – you’ll get a hearty meal everyone in your family will love!
Ingredients
1 lb ground beef
3/4 cup water
1 packet taco seasoning
7.25 oz box macaroni and cheese
4 Tbsp Land O’ Lakes butter
1/3 cup McArthur milk
1/3 cup Daisy sour cream
1 cup shredded cheddar cheese
1 cup salsa
Instructions:
Brown meat and drain the grease. Add taco seasoning and water, simmer until most liquid is absorbed.
In the meantime, cook mac and cheese according to package directions using the butter and milk. Add the sour cream to the macaroni and cheese.
Spread half of the mac and cheese on the bottom of a 2 quart baking dish. Top with browned beef and sprinkle 1/2 cup shredded cheese. Add second half of macaroni and cheese. Sprinkle as much cheese on top as you’d like!
Cover with aluminum foil and bake at 400F for 15 minutes.
Remove foil and spread salsa over top. Sprinkle remaining 1/2 cup shredded cheese over salsa. Bake an additional 5 minutes or until cheese is melted.
