Since I have a busy life, whenever I get that break, I want to just relax around the house; lounge around in my pajamas while drinking coffee and reading a novel. While I love food, there are times when I’m just too tired to slave away in the kitchen. I know you feel the same way at times. And that’s what often drives me into cooking something with a bit too many calories, which is a shame considering my niece has to eat it, too.

Ingredients
1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
2 1/2 cups water
1 (10-3/4-ounce) can Campbell’s condensed broccoli cheese soup (use vegetable broth instead if you’d like to cut down even more calories)
1 medium-sized onion, finely chopped
2 cups Green Giant broccoli florets (fresh or frozen)
2 (6-ounce) packages Uncle Ben’s wild and long-grain converted rice mix with seasoning packets
1 cup low fat cheddar cheese
Instructions
In a 4-quart (or larger) slow cooker, combine chicken, water, soup, and onion; mix well. Cover and cook on low setting for 4 hours.
Add broccoli and rice; cover and cook for an additional hour.
Stir in cheese and serve.
