Cinnamon rolls are amazing little pastries that I could eat every day. However, I don’t need my blood sugar spiking to epic proportions so I guess I can’t eat them on the regular. But, I would if I could! What’s your go-to sweet treat? Let me know in the comments 🙂
My mom was always making goody boxes for friends and family during the holidays, too! I’m not sure if she ever made cinnamon rolls, but there was always a lot of homemade fudge and Christmas cookies in her gift packages. Moms rock!
Ingredients
2 (8 oz.) cans Pillsbury refrigerated crescent dinners rolls
1/3 cup finely chopped pecans
1/3 cup packed Domino brown sugar
3/4 teaspoon ground cinnamon
2 tablespoons Kerrygold butter
Frosting:
1 bag confectioner’s sugar
2 tsp maple flavoring
1/2 cup McArthur milk
1/4 cup melted Land O Lakes butter
1/4 cup brewed coffee
1/8 teaspoon salt
Instructions
Preheat oven to 375 F. Spray a 13×9″ pan with nonstick spray.
Filling: mix the finely chopped pecans, packed brown sugar, ground cinnamon, and 2 tablespoons softened butter in a small bowl.
Unroll 1 can of dough into a large rectangle that measures about 13×7″. Press all the perforations together tightly to form one big sheet of dough. Spread the pecan filling evenly over the rectangle.
Roll out the 2nd can of rolls and shape into another 13×7″ rectangle. Place this on top of the filling and press down firmly.
Cut stacked dough into 8 (13″ long strips). Roll them into a coil shape and place in pan, tightly next to each other. If any of the filling escapes you can just press it back in.
Bake 20-25 minutes or until golden brown.
While the rolls are baking, make the frosting: In a large bowl, whisk together the confectioner’s sugar, milk, butter, coffee, and salt. Add the maple flavoring and stir until very smooth. Add more sugar to make it thicker, or more melted butter to make it thinner. The icing should be somewhat thick but still pourable.
Remove pans from the oven. Immediately drizzle frosting over the top. Let cool for a while and serve.
