The sweetness of the watermelon contrasts very nicely with the spiciness of the jalapeno, and the sharpness of the mint and onion are, in turn, well complemented by the more mellow taste of fresh cilantro. The result is an original, refreshing, gourmet-level complexity of flavor that no mass-produced, store-bought option (like Tostito’s) can offer, and it is a lot healthier than your usual dip from the supermarket, too.

Making it is as simple as tossing all of the ingredients together once you’ve finished all of the chopping and dicing. (Even if you aren’t expert at that, it shouldn’t take you more than about 10-15 minutes for the amount of ingredients listed.) With the stated amounts, you will have six to eight decent servings; if you need more, the recipe can easily be multiplied. And you can serve the dip immediately or refrigerate it for up to two days–whatever works best for you and your schedule.

 

Ingredients

4 cups diced seedless watermelon
1 cup diced red onion (about half a medium red onion)
2/3 cup chopped fresh cilantro leaves
1/2 cup chopped fresh mint leaves
1-2 jalapeno(s), seeded and finely diced (add more/less to taste)
zest and juice of 1 lime

Instructions:

Toss all the ingredients together and serve immediately or refrigerate up to 2 days.
