The best thing about these sammies is that you can turn them into a tasty lunch or dinner. Serve some green salad on the side, or quickly cook some spinach and add it into the sandwich.
I also love to spice up the eggs with a little bit of Tabasco or chili powder! You may want to be careful with that if you’re serving these to kids, but my husband loves extra spicy sandwiches. Or you could use BBQ seasoning to get even more flavor. Either way, these sammies are going to blow your mind!
Ingredients
8 thick slices nitrate-free bacon
1 tbsp. Bertolli olive oil
1 tbsp. unsalted butter, plus extra for buttering the bread
4 large Eggland’s eggs
Sea salt and freshly ground black pepper
8 slices whole-grain bread
4 slices Cheddar cheese
brown sugar (optional, check the quick tip below!)
ham and chopped tomatoes, optional
Instructions:
Cook the bacon the way you like it.
Fry two eggs; 1 minute per side, if you’d like the yolk to be a little runny.
Spread one side of each slice of bread with butter and put those sides down on the hot pan. Stack up your cheese, bacon, and eggs. Add ham and chopped tomatoes, if using. Top with other slice of bread. Grill until bread is golden brown and cheese is melty.

Quick tip: Brown sugar is my secret ingredient! I sprinkle some of it on top of the bacon, right before it’s done cooking. Yum!
