My husband and I love to grill.  Always have, always will. 

We love to go out to Costco or BJ’s the night before we plan to grill and buy all of our favorite cuts of meats, veggies, and bread.  Sometimes we even buy what we need to make a pizza and we actually grill it as well.  It is so much fun and delicious to eat a smoky, perfectly crisp pizza.  You should really try it someday as it is positively delicious. Well, back to the BBQ.  My husband and I were having our kids and grandkids over for dinner, so we went out and bought everything we needed.

On the way to the register, we found the bacon on a super sale, so we went ahead and bought it.  We were not thinking of using it for grilling, just to have it for breakfast.

Well, we picked up our grandson Luke and got to work on prepping food for the night (he was going to spend the night for us).  When Luke saw the bacon, he came up with a genius idea: wrap the corn in bacon.  How had I never thought of that? Luke is simply genius, I tell you!

My husband is a huge lover of corn.  My goodness, that man can eat it.

Whether it is on the cob, from the can, or if I peel it off myself for him, he will chow it down like water.  I mean seriously, I have seen that guy pop open a can of corn, drain the liquid, and then sit with that on the couch and eat it a spoonful at a time until it is completely gone.  He truly loves corn and will eat it on its own, with anything, on anything or in anything.  It is pretty crazy. Well, he has passed on his love of corn to our kids.

I am not all that much of a corn person, so I know it is definitely not from me that they get it, but these kids go crazy over a can of corn and want me to stuff it in their tacos, over their mashed potatoes, and in soup.

They definitely take after their father.  Well, after a long time of just serving it in their food, I thought to myself, “why don’t I make them all a corn appetizer?” And I did.  From there came this corn salsa.  They will chow this down so quickly, you wouldn’t even know it was ever there.

One of my favorite things to do is prepare an overnight casserole. 

So often I have my grandkids over for the night and we like to spend the most amount of time with them that we possibly can.  We have so often wanted to spend the morning relaxing with them when instead we are stuck in the kitchen making the kids a bunch of different breakfasts depending on what they like.  With a bunch of picky kids, it becomes difficult to really find that one dish that they all love. With that being said, we have experimented so much in finding our grandkids that one dish that they absolutely adore, that I think we have found it.

The best part about it: it is a crockpot casserole dish.  I have never found such an easy breakfast dish to make that all my grandkids love so I was thrilled to come across this one.

Better yet, this dish is so incredibly easy to make in the Crock Pot! That gives me more time to get on the floor and play with the kids, sing with them, or watch their favorite movies.  This is most definitely the best Crock Pot recipe I have found since it pleases everyone!

My husband and I love watching old movies.

He never liked studying history, but this has been a very effective way for him to appreciate history. Period movies based on real-life events are something that we love watching when the kids finally fell asleep. It’s a consistent routine every Friday; we watch something animated and then when the kids finally sleep, we put in a favorite movie of ours. Usually, it’s this type of movie. One of my favorite period movies is The Musketeers. I love the story of their adventures and of course the value of teamwork and trust amidst all the betrayal.

Anyway, it might sound a bit predictable, but this cake that I am going to share with you reminds me of The Three Musketeers. It’s called tres leches cake, and the taste is just “triple the goodness”. Definitely sinful and satisfying. This is a favorite of my husband and my kids. They love the creaminess of the cake and that certain kick that it has. They always look happy whenever this is on the menu.

Hey, everyone! I hope you are all enjoying your day. It is a warm and breezy day here in western Pennsylvania, which is a nice change compared to how it has been.

I’m so sick of the cold weather and snow. However, I do try to be thankful no matter what the day brings because this is the day that the Lord hath made, after all! Do you know what I am thanking the Lord for today? Upside down hummingbird poke cake in bundt form. Now, doesn’t that have a nice ring to it? Just saying this desserts name tickles my eardrums.

When it comes to bundt cakes I’m all in. I love the bundts! Bundt cakes are super easy to make, they look gorgeous, and they taste lovely. This hummingbird poke bundt is extra special because the glaze literally drips down into the inside of the cake. It’s absolutely divine.

One of the things that I enjoy most about this cake is how I can toss things in the center of the cake. I like to add chunked pineapple. It looks pretty and tastes super sweet. Enjoy!

Ladies and gentlemen, I am totally smitten by this raspberry tray tart.

If you enjoy eating fresh berries you will be head over heels for this yummy dessert. it’s easy to make and the ingredients are simple. Plus, the presentation of this yummy dessert is absolutely beautiful. I’m telling you what, if you show up to a family get-together or potluck dinner with this tray tart in tow you will be the VIP of the event. Guaranteed. I promise you, there will be no leftovers to take home so if you are planning on leftovers do yourself a favor and make a double batch.

When I made this raspberry tray tart I used fresh berries from the bush behind my house. We have this quaint little trail that leads right into the Appalachians and at the beginning are a few raspberry bushes. If you can use fresh berries, please do. If you don’t have your own raspberry bushes try to scratch some up at your local farmer’s market.

This recipe calls for honey and I used raw, locally sourced honey from my area. There are a lot of Amish farms where I live here in Pennsylvania and I try to purchase my honey from them. Nothing beats a tart made from local raspberries and honey. Yummo!

Once or twice a week I’ll allow my children to choose what we have for dinner.

Once they choose, we will go to the grocery store and find the ingredients that we need to make it all happen. Then, when we get home I’ll have the ‘lil buggers help me cook the meal. I’ve been doing this for years with my kiddos and they love it. Even my teenagers enjoy this little tradition. My youngest will typically go online to find a recipe that is befitting of his taste buds while my older kids enjoy pawing through my old cookbooks and recipe cards.

One day last week, it was my middle child’s turn to choose a recipe for our family dinner. He actually opted to take to the internet for inspiration instead of my cookbooks. What he found was truly amazing. he told me that he wanted macaroni and cheese and at first, I was a bit disenchanted because it seems like we are always eating good old mac ‘n cheese.

My son showed me the recipe that he had found over on Plain Chicken and it was for Kentucky Derby Hot Brown macaroni and cheese. All I needed to do was glance at the ingredients and know that my boy had found us a real winner!

Creamy cheese, bacon, and turkey meat are just a few of the insanely tasty ingredients that are intermingled in this delicious recipe. The kids and I made the dish and all was well with the world at dinner time 🙂
