My husband is a huge lover of corn. My goodness, that man can eat it.
Whether it is on the cob, from the can, or if I peel it off myself for him, he will chow it down like water. I mean seriously, I have seen that guy pop open a can of corn, drain the liquid, and then sit with that on the couch and eat it a spoonful at a time until it is completely gone. He truly loves corn and will eat it on its own, with anything, on anything or in anything. It is pretty crazy. Well, he has passed on his love of corn to our kids.
I am not all that much of a corn person, so I know it is definitely not from me that they get it, but these kids go crazy over a can of corn and want me to stuff it in their tacos, over their mashed potatoes, and in soup.
They definitely take after their father. Well, after a long time of just serving it in their food, I thought to myself, “why don’t I make them all a corn appetizer?” And I did. From there came this corn salsa. They will chow this down so quickly, you wouldn’t even know it was ever there.
