There is absolutely nothing better than a crispy, deep fried tortilla covered in cinnamon sugar.  Then filled with warm, gooey chocolate fudge, fresh fruit, and topped with whipped cream and candy sprinkles.

Enjoy this with a cup of cold milk and you have the perfect treat you won’t want to share with anyone! I enjoy surprising my kids with these luscious dessert tacos after they get home from school. It’s always nice to see the look of surprise on their sweet little faces as they eyeball these amazing treats.

 

This recipe requires deep frying so it seems a little lengthy, but it truly is not. It only takes about 10-15 seconds to get the tortillas ready so you’ll be on your way to the next step in no time.  To make everything go smoothly and quickly, prepare your station before hand so you’re able to go through it all quickly.

Quick Tip: Push the tortilla down as it fries to achieve a golden color much faster.  Keep a close eye on it though so they don’t get a deep brown color.

I was never much of a cornbread casserole person.  I actually just didn’t eat much corn in general.  That is, until I met my husband.  He is obsessed with corn and wants it on everything. He introduced me to this fabulous BBQ beef cornbread casserole, and everything changed! I couldn’t believe how great the flavors of this casserole meshed together. To put it simply, this cornbread BBQ beef casserole is delicious.

 

One day he asked me to make him cornbread casserole, but I had never made it so I wanted a quick and easy recipe.  After searching for a bit, I found this recipe that is made in under an hour with just 5 ingredients.  It can’t get much simpler than that!

This recipe is one that has become a favorite in my family.  Since the first time I made this, I have never again been asked to make regular chocolate chip cookies, but these “special” ones.  These cookies can turn any old day into a special occasion.  It is a sure way to make every day special and show those around you that you care.

 

These cookies are the absolute best when enjoyed with a tall glass of milk and you are able to dunk them until they’re soft and soaked.  Mmm just dreaming about them now!  Your kids, grandkids and friends will love these.  Consider making these for your next get together.  Or don’t wait until then, make them before and enjoy them all on your own.

Do you enjoy Rice Krispie treats?  I sure do.  I love them alone, dipped in fondue, covered in caramel or chocolate or any other way.  What makes them better, you may ask? Well, my husband discovered the trick. It really isn’t all that complicated, either! If you can go to the store, buy a box of Cocoa Rice Krispies, drive home, and pour the ingredients into a bowl, you can most certainly master the fine art of whipping up a batch of these beloved treats!

 

Cocoa Krispy flakes.  Instead of making them with regular Rice Krispie flakes, my husband had the genius idea of making them with the chocolate flavored instead.  It was such an amazing alternative to the original and still sooo delicious with everything I mentioned above.

One thing I had never really tried in my childhood/young adult life was Bourbon Chicken.  It just was not on the menu at home, nor did I ever find it on a menu while I was out.  Maybe it is because my family didn’t drink and I was oblivious, or I just really had never been to a restaurant that served it.

 

I remember when I first tried it, though.  I was out on a date with my husband.  He mentioned how funny it would be if we ordered a meal that contained alcohol, and well, I took that as a dare.  I ordered it, half expecting it to be kinda yucky.  Oh was I wrong (and was he jealous of my meal)!  It was so absolutely tasty.

Now that it’s summer, I keep seeing recipes for cucumber salads.  They look light and refreshing and all, but you know what I really need?  Bacon. Yes, like many people I’m a bacon fanatic and I believe it really could be added to anything. In fact, last Christmas my family got my bacon lip gloss.  Surprisingly, you can’t add bacon flavor to lip gloss.  Well, you can, but you shouldn’t.  However, you really can’t go wrong adding bacon to a recipe, am I right?

 

There’s something about pairing the saltiness of bacon with the refreshing lightness of cucumbers that really drives a one-two punch for this recipe.  You’ll get the feeling of a traditional cucumber salad, but a salty flavor that will WOW your taste buds.  Perhaps it’s your body knowing how good for you cucumbers are, but how sinful bacon can be.

Ever since I was little, I loved visiting farms up north where they would make homemade jams, spreads and butters.  They were all so delicious and I wanted to take them home with me.  Every single jar and every single flavor.  We really don’t get much of those down here in Miami so whenever I travel up north, I make sure to bring home a few jars.

 

You can imagine how overjoyed I was when I ran into a recipe to make apple butter right from home.  And even better: in my crock pot.  How exciting that I can now make apple butter during any season, at any time and can it myself to have whenever I like.  I also love to can it and give it away to my friends.  It is quite a special gift, if you ask me! 🙂
