I don’t know about you guys and gals but coffee cake is one of my most favorite things to eat in the morning with a nice piping hot mug of coffee or tea. I love the way it tastes, smells, and makes my tummy feel. I am also a major fan of morning muffins. How about you? What are your favorite kinds? My fave muffins used to be blueberry but then I discovered this coffee cake muffin recipe and it was a total game changer. Not only do these muffins taste absolutely amazing but they are easy to make, too!

I made up three batches of these little coffee cake muffins the other day. I set a batch out on the counter for my family and I to enjoy, froze a batch for later, and took another batch down to the Fire Hall so that the volunteers had something sweet to munch on. Everyone always loves these coffee cake muffins and for good reason…they are delicious!

Sausage gravy is one of my favorite breakfast foods. it’s flavorful, savory, and really fills up the ‘ol belly. I especially like eating this type of hearty gravy on a  cold, winter’s morning. talk about a breakfast that’ll warm you up! Spooning hot sausage gravy over warm biscuits and scrambled eggs is my kind of meal. Even my kids like it and I feel good about sending them to school with a breakfast like this in their bellies. Kids need a lot of food fuel to get through their busy day 🙂

My husband said that this sausage gravy over hot biscuits is one of his favorite meals. he has even requested that I make it for dinner sometime. It does make a lovely brunch or breakfast-for-supper meal. I enjoy serving it with fresh fruit like cantaloupe and pineapple chunks so that we at least get some sort of nutritional value out of our meal because let’s face it, sausage gravy and biscuits is a comfort food and nothing more lol! You know, I’m a firm believer in the fact that you can have a nice chicken dinner and then you can have a STELLAR chicken dinner. This recipe for roasted chicken is the latter. Wow. Just wow! If you are looking for a recipe that will render a truly tender and yummy chicken meal then look no further because you’ve found in this post. I can’t believe how yummy the skin on this chicken is! Usually, i tear the skin off because I don’t like floppy, rubbery chicken skin on my plate. it’s just gross! Totally not the case, here.

This chicken roasts in the oven until it is perfectly crisp on the outside and moist on the inside. Once you take a bite I am positive your eyes will roll back in your head in pure foodie ecstasy. And you want to know something else spectacular about this recipe? It is totally easy to make! It really doesn’t require much prep work at all. Even if it did, however, I’d still make it because it would be well worth the effort 🙂

Who here is a fan of pizza? If you guys are raising your hands then I bet there aren’t too many paws left on the keyboards at the moment. All right, put your patties down. When I was a young girl my parents would quite often order pizza from this place called the “Village Pizzeria” in our town. The pizza there was delicious and the owner would often make pizzas from around the world. This included a hot and bubbly Chicago-style pie. Now, this type of pizza isn’t for the light eater as it is as deep dish as you can get.

If you were a tiny exploring looking through the caverns of this deep dish pizza you’d probably get lost. Chicago=style pizzas are dripping in sauce, covered in layers of gooey cheese, and topped with anything you want. My personal favorite toppings are pepperoni, ham, mild pepper rings, onions, bacon, green peppers, and heaping mounds of parmesan cheese. A few months ago, i was attending a church potluck at my beloved place of worship. Now, if you’ve ever been to a church potluck before you know full well that this type of dinner takes a turn towards Casserole Central. I mean, it wouldn’t be a potluck dinner if there weren’t a dozen or so casseroles on the table, right? My eyes spied what appeared to be a Mexican casserole dish on one of the tables so I naturally gravitated towards it as I love Mexican food.

It appeared to be an enchilada dish so I got super excited as enchiladas are my favorite Mexican feast. I scooped up a hefty serving and took my place at a table next to my husband and children. I took a bite and was seriously surprised! I was expecting refried beans and beef to be inside of this marvelous casserole but nope! Instead, there was a plethora of seafood. And guess what? It couldn’t have tasted any better. You seriously need to try this recipe for seafood enchiladas. They are creamy. spicy, and very yummy. Enjoy!
