A few months ago, i was attending a church potluck at my beloved place of worship. Now, if you’ve ever been to a church potluck before you know full well that this type of dinner takes a turn towards Casserole Central. I mean, it wouldn’t be a potluck dinner if there weren’t a dozen or so casseroles on the table, right? My eyes spied what appeared to be a Mexican casserole dish on one of the tables so I naturally gravitated towards it as I love Mexican food.
It appeared to be an enchilada dish so I got super excited as enchiladas are my favorite Mexican feast. I scooped up a hefty serving and took my place at a table next to my husband and children. I took a bite and was seriously surprised! I was expecting refried beans and beef to be inside of this marvelous casserole but nope! Instead, there was a plethora of seafood. And guess what? It couldn’t have tasted any better. You seriously need to try this recipe for seafood enchiladas. They are creamy. spicy, and very yummy. Enjoy!
