My husband and I absolutely adore going out to eat. Sometimes, I think we like it just a tad too much. After all, going out to eat can get pricey and you don’t always make the healthiest food choices. We’ve considered our options and have tried to avoid restaurants that only offer fried or salty foods so all fast food joints are off our list and so are Chinese buffets. Sadness about the latter! The mister and I have decided that we will start making more of our own copycat recipes from home. This beef stir-fry is one of them 🙂

The first time I ever had beef stir-fry was when I was a young girl and my mother made it. She had one of those nifty wok things and it was always fun to watch her cook the meat and veggies in it.

I don’t have a wok but I do have a trusty cast iron frying pan and that did the job just as good. I added ginger and scallions to the mix and the aroma of the dish was heavenly. Enjoy!

Quick Tip: The secret to making the beef slices tender in a stir fry like this is brisk cooking, buying a good cut (such as tenderloin) … and baking soda! Yes, baking soda can be used as a natural meat tenderizer and this extra step makes a world of difference to the texture of the cooked beef.
