So yummy, you’ll never go back to rice!
I actually don’t know who came up with the idea of using cauliflower instead of rice, but I have to say it’s brilliant.
And I do know why it has become so popular; it’s just one of the tastiest side dishes I’ve ever made! It’s lean, healthy and low carb, which is exactly what I was looking for. Even my kids love it – especially when I add some extra garlic!
That’s right, even your pickiest eaters are going to love this dish! If you’re not a fan of garlic, you can adjust the flavors by adding more lime or lemon juice. Also, for those of you who don’t like cilantro; just add some of your favorite fresh herbs. Add some lean protein, for example a chicken breast or a fish fillet, and you’ve got yourself a super tasty, healthy meal!
Ingredients
1 head cauliflower
1 tbsp freshly squeezed lime juice
1 tbsp Bertolli olive oil
2 tbsp water
1-2 cloves garlic, minced
¼ tsp salt
¼ tsp pepper
½ cup cilantro, chopped
2 tbsp Land O’ Lakes butter
Instructions:
Prepare the cauliflower head: cut the stem off and break the rest into florets.
Process half of the cauliflower florets in a food processor until it looks like grains of rice. Do the same with the other half.
In a microwave safe dish, put the riced cauliflower with the olive oil, water, lime juice, minced garlic, salt and pepper. Mix well to combine.
Cover tightly with plastic wrap and microwave for 5-7 minutes.
Add the chopped cilantro or other herbs. Taste the cauliflower rice and add butter, additional lime juice, salt and pepper, if needed.
